- cup crushed buttery round crackers

- 2 eggs, beaten

I have made this recipe twice now and it is really a taste treat. This last time, I added 1/2 cup ketchup, a little finely chopped green pepper, and a few extra crackers. I saved a little of the ketchup mixture and topped the meatloaf with it during the last 1/2 hour of baking. I served it to company and was asked for a copy of the recipe so they could make it too. I am on a perpetual search for a good meatloaf recipe, have tried many, and my hubby and I really like this one. It is good for making meatloaf burgers, too! Just add about 1/4 more cracker crumbs to make the burgers firmer. Plus, a good glaze for the meatloaf is 3T ketchup, 1T honey and 1/2t worchestershire. Pour it on before baking and you've got yourself one GOOD meatloaf!

When I remarried, we made a deal: I would do the cooking and my wife would do the dishes. I don't like meatloaf, my wife did. I don't make meatloaf. My wife would volunteer to cook so she could make meatloaf. I would have to use salsa to cover the flavor so I could eat it. Then my wife's ALS progressed and she couldn’t cook or do dishes. I found this recipe and made it for my wife. Surprise! Surprise! Surprise! I like this meatloaf, as is, no salsa, no extras required. Today, lacking “buttery round crackers” I did something new. I made the recipe minus the crackers and used only one egg, formed meatballs, placed them on parchment paper on a grilling rack, set the pellet smoker at 180, and a few hours later . . . Dang near addictive meatballs.

I used crushed pork rinds instead of crackers . No steak sauce but Worchester sauce and brown sugar in topping. I microwaved it for 4 minutes or so and browned it under the broiler for a few minutes.

My family loves this meatloaf. It is our favorite. I like to use cheeze its or cheesy ritz crackers. I also add in some Worcestershire to my ketchup mix and garlic, Cajun seasoning, pepper, Montreal and onion powder to my meat in addition to the other ingredients listed in the recipe. This is the only meatloaf we make. I also make a glaze to go on top 1/4 cup ketchup, 2 TBSP light brown sugar and 1 TBSP red wine vinegar. I add it on the last 15 minutes before it's done. Thanks for the recipe! We love it and agree with others never enough leftovers. This is our go to meatloaf hands down. I follow the recipe adding only about 1/4 cup of breadcrumbs to round it out. Additionally, because I usually cook it on a Sunday for a weekday meal, I slice it thick, spray with olive oil and bake 10-15 minutes flipping once. Each piece gets a fabulous crunchy crust on it.

Delicious. This is a good recipe. My kids love meatloaf but this is the ticket at the end of a long work day. This recipe is quick and easy. I made a ketchup, brown sugar, Worcester sauce glaze for the second half of baking.

My husband has always liked my meatloaf so I thought I would just give this a try. He loves it even more. Been making this one for several years now. I don't do the bread on the bottom. Tired it and we didn't like how it turned out. I just drain it really well if I use a loaf pan. Or I have often free-formed the loaf so it's crispy all around. I spay a broiler pan and set it on a lipped pan so that the grease flows to the bottom. I have even not used the broiler pan and cooked potatoes and carrots around it and then just drain them when done. Also have started using extra sharp or triple cheddar cheese. Also always uses Worcestershire. But have kept the eggs and even used one more for binding. Otherwise, it falls apart. We don't care as it still takes great. I have also kept the ketchup the same too. But I always add garlic and onion powder as we love both. The dry soup mix I have used beefy mushroom and the onion one and liked both.

What hasn't been said about this WONDERFUL meatloaf? It was very good, although I did make a few changes - 93% gr. beef, Ritz Garlic Butter crackers, A-1 sauce, 1/2 pkt. of onion soup mix (due to the high sodium), along with 1/2 of a diced onion. I did not add the ketchup. I baked in four mini loaf pans (to freeze later). I had no grease to drain, and the loafs were still moist. Definitely a keeper. Thank you.

Best meatloaf I ever made!! I didn’t have any Lipton dry soup so I made my own and Instead of beef bullion granules I substituted dry Aujus mix. Used sharp cheddar cheese. The only addition I made was for a topping on the meatloaf. I mixed 1/4 cup each of brown sugar and ketchup. The last 15 minutes I poured that on meatloaf. This will be our go to meatloaf now! My husband hates leftovers but he wanted meatloaf sandwiches for lunch today!!

I have been using this recipe for years! This recipe has endured the test of time in my family! I do always give the Rempel family credit, though. Now when people ask me for the recipe it's always - "you know, the one you got from your friends". The Rempels (whoever they are) have been a part of the family for a long time now! :) My mom and I were looking to spice up our family recipes as some were pretty dated. Her meatloaf recipe was from her mother who got it from a product box sometime in the early 50s. Basically just meat, eggs, oatmeal, and some tomato based sauce - ketchup, tomato sauce or tomato juice - she even used V8 a while in the 80s. This recipe was just what we needed! It was so good I made it as is for about 5 years. I have always omitted the ketchup as we are not ketchup people but that is it. Sometimes I make changes like using half and half hamburger and Italian sausage or sometimes I wrap it in bacon (my niece's favorite and her go to Birthday meal from me) or sometimes I use a creamy cheese sauce instead of grated cheese. HIGHLY recommend trying this without tweaks (unless there is something you absolutely dislike like the ketchup ;). ) before adjusting it.
