Origin and History
Lobster tails, especially broiled lobster tails, have long been a symbol of luxury and indulgence in culinary traditions. The practice of eating lobster can be traced back to the indigenous peoples of North America, particularly the Native Americans along the East Coast. However, broiling lobster tails became popular in the 20th century as lobster was introduced into the homes of more people, thanks to modern kitchen appliances like ovens and broilers. Before this, lobster was mainly boiled or steamed in large pots. The method of broiling lobster, which involves high heat from above, brings out the rich, natural flavors of the lobster meat and gives it a delightful golden-brown finish.
Regional Variations
Broiled lobster tails are a beloved dish in many coastal regions, particularly in the United States. New England, known for its lobster fishing, is famous for its lobster rolls and boiled lobster, but broiled lobster tail has also found its place on local menus. The dish is also quite popular in Florida, especially in upscale restaurants that feature fresh seafood. In the Caribbean, lobster is often prepared with tropical spices, and while broiling is common, it is often served with a more varied seasoning palette, including jerk spices or citrus marinades.
Differences from Similar Dishes
While broiled lobster tails may seem similar to other lobster preparations, such as boiled or grilled lobster, there are distinct differences. Boiling lobster tends to result in a more watery texture as the meat absorbs water from the boiling process. Grilled lobster, on the other hand, offers a smokier flavor but can sometimes dry out the meat if not carefully watched. Broiling, however, allows for a perfect balance, with the meat staying moist while developing a caramelized exterior. Additionally, broiled lobster tails often feature a simple seasoning of butter, paprika, salt, and pepper, allowing the natural flavor of the lobster to shine through, unlike some grilled varieties which may incorporate marinades or heavier seasoning.
Where to Serve Broiled Lobster Tails
Broiled lobster tails are commonly served in fine-dining restaurants, especially those that specialize in seafood or offer special holiday menus. The dish is a popular choice for special occasions, including New Year's Eve, Valentine's Day, and anniversaries. It is also a favored entre in upscale restaurants in coastal areas where fresh lobster is plentiful. At home, broiled lobster tails are a fantastic way to elevate any dinner party or celebratory meal. Whether paired with a crisp white wine or a glass of champagne, they bring a touch of elegance and indulgence to any table.
Interesting Facts
- Did you know that lobster was once considered "poor man's food"? In the 19th century, it was so abundant that it was mainly fed to prisoners, indentured servants, and the poor. Today, it is a luxury item in many parts of the world.
- The largest lobster ever recorded weighed over 44 pounds and was caught off the coast of Nova Scotia, Canada, in 1977.
- While most lobsters are dark blue, green, or brown, when cooked, their shells turn a bright red due to a pigment called astaxanthin, which is released by the heat.
- The process of removing the lobster meat from the shell for broiling is often referred to as "butterflying," and it is essential for presenting the lobster in an elegant way.
- Lobster tails are often considered the most tender part of the lobster, as they come from the tail muscle, which is less worked compared to other parts of the lobster.

I have used this recipe a couple of times. I modified it by adding the salt, pepper and a little white cooking wine (1/4 cup? I didn't measure) to the melted butter. Using a basting brush, I basted the lobster meat with about half of the butter/wine mixture before broiling. I bought my lobster tails at Costco and they were fairly large. They required more than 10 minutes of broiling. I found that keeping them in the shell while cooking, keeps them from burning and drying out. Prior to serving, I pull the meat out of the shell and lay it on top of the shell (partially attached at the small end) for a better presentation and serve with the remainder of the butter/wine mixture for dipping.

Made these for New Year's Eve - what a treat!! I split the meat about half way through and used a skewer inserted just under the tail and run the whole length to keep them from "curling". Then, I spread the shell so that it was "open". I broiled them one up from the bottom rack to prevent burning with two one pound tails, and left he door open to watch them intently! I drizzled with garlic butter several times during the cooking process, as well as putting about a half cup of water in the bottom of the broiling pan (to help keep them moist - the water becomes steam during cooking). Keep in mind that frozen lobster tails WILL BE tougher than fresh - no matter what you do, so take great care cooking, or you will loose flavor and the lobster will be "rubbery". All that said, cooking time took longer than some folks for 1 pound tails, about 30 minutes, but well worth it!! The flavor was fabulous!!

I liked the recipe and only gave it four stars as I used the base methods but the time was not right for broiling. I did 3 half pound tails. I added my seasonings into the butter then melted it and brushed on the lobster. I used a 1/4 tsp Old Bay and another 1/4 teaspoon minced garlic. Also a1/2 tsp paprika. Broiled on 500 degrees about 8 inches below the broiler and used my Thermadot to catch them right at 140-145. I did brush them two more times while broiling. It took just over 20 minutes to hit temp. I am glad I did not find a full pound set of lobster tails as I feel the outside would have dried out before the inside cooked. One of mine was slow and not quite opaque in the center. And neither one of us finished the half pound tail with the sides.

No effort, very easy and few ingredients. Broiled in my mini-oven and was done by the time my veggies had finished steaming. I added the spices to the meat, not in the butter and added garlic to the butter for dipping, if desired. Yummy!

I made this for my husband for Valentine's Day dinner. .... Delicious! I made a few adjusts ... I melted the butter along with the following ... 1 minced clove of garlic, a 1/4 tsp of paprika and a 1/4 tsp of smoked paprika ... I wanted a slightly smokey, sweet flavour while not over powering the other flavours. Yes, the cooking time instructions are vague ... all I can say is, thank goodness for GOOGLE!! *** The rule of thumb is Broil 5-6 inches from the broiler on HIGH ... *** approximately 1.5 MINUTES PER OUNCE *** I had (4) 2 oz tails = 3 minutes but decided to add 2 more minutes for good measure ... for a total of 5 minutes and they turned out perfectly! ... tender and juicy ***Youtube is also a great reference on, How to remove the lobster meat from the shell, how to prep for broiling for the WOW factor !!... LOBSTER TAILS 101 is a good one. This will be a keeper for next year's Valentine's Dinner .

Made this tonight to rave reviews! A few shakes each of dry spices on each cut lobster tail : powdered garlic, powdered onion and paprika with a drizzle of melted butter on each, about two tbsp total for four tails. Broil highest rack in the oven for 20minutes. Baste with juices from the pan and turn off the oven leaving the door open. Plated some spaghetti (dressed with olive oil, garlic, basil and Parmesan cheese) along with the lobster, just divine. Served with melted butter for dipping.

I had three (smaller) lobster tails but only needed half the butter. Instead of wresting to get the paprika, S&P and (I added) minced garlic evenly spread over the tails/meat, I mixed into the melted butter. Using a silicone brush, lathered it on and between the shells. Broiled on high for 8 min but placed on the second rack from the top to not burn. Simple but solid flavors and let’s the lobster shine. It was also a stressless dish to add to our holiday table. Thanks SKYGRETCH!

So simple to make!! Love it. I used 6-7 oz lobster tails, cooked on second rack from bottom, oven on broil (I don’t have a degree on my broiler) i place day a skewer under lobster thru tail length wise while cooking to prevent curling. Leave lobster meat inside shell. I also used Old Bay Seasoning in place of paprika. Cooked mine for 12 minutes and was perfect!! I will definitely use this recipe again. Hope this helps others.

Once you’ve prepped your lobster tails (cut down center of spine and removed membranes) place two-three fingers into the underside of the shell in order to lift the meat into the top of the shell. This allows you to season and butter the meat as well as enhancing the visual when plated.

I used four lobster tails without doubling the amount of butter. I added garlic to the extra butter and we used it for dipping and on bread. Cutting the shell was a little tricky. I did not find it necessary to re-arrange the oven shelves and they broiled in about 7 minutes.

Easy and delicious. only change was some minced garlic which I sauted in butter and added with the melted butter over the lobster tails before broiling. I served with prosciutto wrapped asparagus and twice baked potatoes from this site. was a big hit with the family!!

I made this for Valentines day and it was a hit. I thought I had used a little too much paprika, but it was great. The only difference I made is that I popped the meat out of the shells and laid it on top before I broiled it.

Did 12 of these for New Years Eve and ended up doing this option instead of on the grill. This was easy and turned out perfect. Cooking time can vary a little so just keep an eye on them.
