Instant Pot Southern Cabbage Recipe
Ingredients
This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly.
Original recipe (1X) yields 8 servings:
- 3 slices bacon, cut into 1/2 inch pieces
- cup butter
- 1 head cabbage, cored and chopped into 1 1/2-inch pieces
- 2 cups chicken broth
- Salt and ground black pepper to taste
Directions
Step 1: In an open 8-quart pressure cooker, cook and stir bacon over medium heat for about 4 to 5 minutes until tender. Avoid crisping the bacon unless you prefer it that way.
Step 2: Add butter to the pot and stir until it melts completely.
Step 3: Add chopped cabbage to the bacon-butter mixture and pour in the chicken broth. Season with salt and pepper, then toss the cabbage to ensure it's well-coated.
Step 4: Secure the lid on the pressure cooker, place the regulator on top (depending on your pressure cooker model), and turn the heat to high. When the regulator begins to rock or the cooker reaches full pressure, reduce the heat until the regulator is gently rocking at 15 PSI.
Step 5: Cook for 3 minutes under pressure. Immediately remove the cooker from the heat and release pressure carefully using the quick-release method, as per the manufacturer's instructions.
Step 6: Unlock the lid, remove it, and transfer the cabbage to a serving plate. Serve hot and enjoy!
Cooks Note
You can add some diced cooked ham to the pot before cooking for a complete meal.

This Instant Pot Southern Cabbage recipe offers a quick, flavorful way to enjoy a classic Southern side dish. The combination of cabbage, bacon, butter, and chicken broth creates a savory and comforting dish that pairs perfectly with many Southern meals.
Origin and History
Cabbage has been a staple in Southern cuisine for centuries. Originally introduced to the United States by European settlers, cabbage quickly became a popular vegetable due to its hardiness and ability to thrive in various climates. The Southern United States, with its rich agricultural history, embraced cabbage in numerous dishes, often pairing it with pork for added flavor. The Instant Pot version of this dish brings a modern twist to a time-honored classic, speeding up the cooking process while maintaining the dish's rich flavors.
Regional Variations
While Southern cabbage is commonly made with bacon, other regional variations include the use of smoked sausage, ham, or even turkey. In Louisiana, for example, you may find cabbage cooked with spices like cayenne or paprika to add a bit of heat. The versatility of cabbage allows for endless customization, depending on the region and the cook's preferences. In some Southern households, the dish may also be paired with cornbread or even mashed potatoes for a hearty meal.
Difference from Similar Dishes
Compared to other cabbage dishes, such as Irish boiled cabbage or Eastern European coleslaw, Southern-style cabbage typically has a richer, more savory flavor profile. This is due to the addition of bacon, butter, and chicken broth, which contribute depth and umami. While Irish and Eastern European dishes often emphasize the cabbage itself, Southern cabbage recipes use pork as a flavoring agent, making it a heartier and more indulgent side dish. The Instant Pot method also sets this recipe apart, drastically reducing cooking time without sacrificing flavor or texture.
Where It's Typically Served
Southern cabbage is most often served alongside main dishes such as fried chicken, pork chops, or ham. It is a popular choice for holiday meals, particularly during Thanksgiving and Christmas, but it is also enjoyed year-round as a comforting side dish for family dinners. In the South, you might also find it served at barbecues, potlucks, and church socials, where it complements a variety of meats, particularly smoked or roasted meats.
Interesting Facts
1. Cabbage is one of the oldest cultivated vegetables, with a history dating back to ancient Greece and Rome. It was a common food for peasants due to its affordability and versatility.
2. The addition of bacon or smoked sausage in Southern cabbage recipes not only adds flavor but also provides a rich source of fat, which helps balance the cabbage's natural bitterness.
3. Cabbage is a nutritional powerhouse. It's packed with vitamins C and K, as well as fiber and antioxidants, making it a healthy addition to any meal. In fact, it's often touted for its anti-inflammatory properties.
4. The Instant Pot revolutionized how we prepare traditional dishes like Southern cabbage, reducing cooking time while maintaining the dish's original taste and texture. It's a great example of how modern cooking methods can adapt and improve classic recipes.

I made a few changes. The most significant was 2 12oz. links of beef Polska Kielbasa cut into 1 in pieces instead of the bacon. I also used beef broth rather than chicken stock, added one chopped onion when sauteing the sausage, and a bit of thyme and Frank's Red Hot sauce when adding the cabbage. I cooked it in my electric pressure cooker on high pressure for 5 minutes, and did quick release. Everyone loved it, and the cabbage was soft without being overcooked or mushy.

First, I am an experienced pressure cooker user. Instead of the bacon, I used 2 lbs smoked sausage. In the pressure cooker, I sauteed the smoked sausage cut in rounds, 1 chopped onion, 2 cloves garlic and spices that I like and then mixed in the cabbage. I like the pot juices over my cabbage and cornbread, so I used 1 cup homemade stock and 1 c water. With smoked sausage, I like my cabbage softer so I cooked about 7 minutes and quick cooled my pressure cooker. I saw where one users cabbage stuck and burnt. If you're new to pressure cooking and regulating, sometimes it is best to use a bit more liquid as you may be losing liquid as steam escapes your PC.

I gave the original recipe 4 stars because it’s super easy and tasty. With a few additions, it is even better. I used 3 strips of bacon (left over from another recipe) and then tossed in a ring of kielbasa to brown, along with a large sliced onion. As per others, I added a few shakes of Worcestershire sauce and also a few shakes of herbs de Provence. I also only used one cup of broth and that seemed a bit much at the end so I let it simmer with the lid off for about half an hour to reduce. Flavor was fantastic!

I'm new to cooking with a pressure cooker/quick cooker since Christmas. Great recipe. I skipped the bacon step and added half of a small ham to simmer along with the cabbage. Ready in 6 minutes, like magic. Ham was fork tender while cabbage was delish (used 2 cups of water with 2 teaspoons of Better Than Bullion (chicken flavor). My only regret...I wish I'd used a bigger head of cabbage to make more!

I made this in my instant pot and it was delicious. I used smoked turkey sausage instead of bacon and did what another reader did— browned the pieces in butter, Worcestershire sauce and garlic. I used only 1 can of broth. My husband really liked it too and this meal was low carb for his diabetes. We both thought it was very good.

Added garlic (because I add garlic to just about anything) and threw in some chopped green onions I had to use. 1 cup stock and 8 min in my digital pressure cooker. Hubby says "real good" and I liked it too! I also sprinkled with some freshly grated Parmesan cheese. Great quick supper!

Quick and easy recipe to make for cabbage. Pretty tasty, but would have been to bland for our liking as written. Made this in the Instant Pot and next time would reduce the amount of broth to 1 or 1.5 cups. I would also cook the bacon in the IP and remove it from the pot to add back in once the cabbage is done. I couldn't resist adding more seasoning and sprinkled in some garlic and onion powder. Next time, I would saute some onion and garlic in the bacon grease before adding the cabbage. Overall, this is a good recipe for cabbage that is easy to tweak to your taste preference. Thanks for the recipe!

Had half a left over green cabbage that I needed to use up, so sauteed Field Roast sausage (vegan) in some olive oil, and then threw in the cabbage with half a cup of veggie stock. 3 minutes in the Instant Pot, quick release of pressure, and seasoned, to taste with salt, pepper, turmeric, garlic, and a Trader Joe's blend. DELICIOUS.

Don't you love no brainers!! I made this a one pot meal. I used garlic, 2 bay leaves, carrots, onions, potatoes, leftover ham & cabbage and of course home made chicken broth. I also make my broth in PC using rotisserie chicken carcasses. Rotisserie ckns make a much more flavorful broth. This makes a great one pot meal in 6 minutes. I also make this with smoked polish.

Great improvement / modification by drizzling a little balsamic vinegar on top of your individual bowl. Was good as is, slightly al dente by following recipe.

I added a handful of frozen onions and peppers and cooked my bacon till almost crisp. Then added sausage, and a can of chicken stock and pressure cooked in a ninja xl for 10 minutes..turned out great…I fried out a can of corned beef hash separately to put on top. One pot meal with cornbread.

I did not have bacon so instead added ham. Usually, I make cabbage and the leftovers go into the fridge until they are thrown out. Leftovers did not go to waste and the family is asking me to make it again.
