Coconut Lamb Cake Recipe

Ingredients
This recipe yields 16 servings:
- 1 (15.25 ounce) package white cake mix
- 1 egg white
- cup white sugar
- 1 pinch salt
- 3 tablespoons water
- 1 teaspoon light corn syrup
- teaspoon vanilla extract
- 1 cup flaked coconut
Directions
Follow these steps to prepare the lamb cake:
- Preheat your oven to 450F (230C).
- Grease and flour a lamb cake mold thoroughly.
- Prepare the cake mix according to the instructions on the package.
- Pour the batter into the face half of the well-greased lamb mold.
- Cover the batter with the back half of the mold and secure it with wire or a tie.
- Place the mold face down on a baking sheet and bake for 15 minutes at 450F (230C).
- Reduce the temperature to 350F (175C) and bake for an additional 35 minutes.
- After baking, remove the cake from the oven and carefully take off the back half of the mold.
- Allow the cake to cool in the face half of the mold for about 5 minutes.
- Loosen the cake from the sides of the mold and remove it gently.
- Stand the lamb cake upright on a cooling rack until completely cool.
- Once cooled, frost the cake with snow frosting and cover it with flaked coconut.
For Snow Frosting:
- In the top of a small double boiler, combine the egg white, sugar, salt, water, and corn syrup.
- Beat the mixture with a rotary egg beater for about 1 minute, until thoroughly mixed.
- Cook over rapidly boiling water while constantly beating with the egg beater for 4 minutes, or until the frosting forms stiff peaks.
- Remove from the boiling water, add the vanilla extract, and continue beating for another minute, or until the frosting is thick enough to spread.
