Chocolate Chip Cookies with Avocado Recipe

Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- teaspoon salt
- cup white sugar
- cup brown sugar
- cup unsalted butter, softened
- cup mashed avocado
- 1 teaspoon vanilla extract
- 1 egg
- 10 ounces chocolate chips
Directions
- Preheat your oven to 375F (190C). Lightly grease your baking sheets with cooking spray.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, beat the white sugar, brown sugar, butter, mashed avocado, and vanilla extract using an electric mixer until the mixture becomes smooth and creamy.
- Once the mixture is creamy, beat in the egg until fully incorporated and smooth.
- Gradually add the flour mixture to the wet ingredients, a few tablespoons at a time, stirring until just combined. Be careful not to overmix.
- Stir in the chocolate chips until evenly distributed throughout the dough.
- Using a spoon, drop rounded portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 8 to 10 minutes, or until the edges of the cookies are lightly browned.
- Let the cookies cool on the baking sheets for about 2 minutes before transferring them to a wire rack to cool completely.
