Chocolate Chip Cookies with Avocado Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • teaspoon salt
  • cup white sugar
  • cup brown sugar
  • cup unsalted butter, softened
  • cup mashed avocado
  • 1 teaspoon vanilla extract
  • 1 egg
  • 10 ounces chocolate chips

Directions

  1. Preheat your oven to 375F (190C). Lightly grease your baking sheets with cooking spray.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the white sugar, brown sugar, butter, mashed avocado, and vanilla extract using an electric mixer until the mixture becomes smooth and creamy.
  4. Once the mixture is creamy, beat in the egg until fully incorporated and smooth.
  5. Gradually add the flour mixture to the wet ingredients, a few tablespoons at a time, stirring until just combined. Be careful not to overmix.
  6. Stir in the chocolate chips until evenly distributed throughout the dough.
  7. Using a spoon, drop rounded portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 8 to 10 minutes, or until the edges of the cookies are lightly browned.
  9. Let the cookies cool on the baking sheets for about 2 minutes before transferring them to a wire rack to cool completely.
