Carrot Cake Recipe
Ingredients (Original recipe yields 6 servings)
- 1 egg
- cup honey (Optional)
- cup peanut butter
- cup cooking oil
- 1 teaspoon vanilla extract
- 1 cup shredded carrots
- 1 cup whole wheat or white flour
- 1 teaspoon baking soda
Directions
Step 1: Preheat the oven to 350F (175C). Grease a 6-cup ring mold or fluted tube pan.
Step 2: In a large bowl, combine the egg, honey (if using), peanut butter, cooking oil, and vanilla extract. Mix well until the ingredients are fully blended.
Step 3: Add the shredded carrots to the mixture and stir until the carrots are evenly incorporated.
Step 4: Sift the flour and baking soda together in a separate bowl. Gently fold the sifted dry ingredients into the carrot mixture, ensuring everything is well combined.
Step 5: Spoon the batter into the prepared pan, spreading it evenly.
Step 6: Bake the cake in the preheated oven for approximately 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Step 7: Once baked, let the cake cool in the pan for about 10 minutes. Then, carefully turn the cake out onto a wire rack to cool completely before serving.
