Vegan Zucchini Brownies Recipe

Ingredients

  • Cooking spray
  • 1 cup white sugar
  • cup brown sugar
  • cup olive oil
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • cup cocoa powder (such as Hershey's)
  • 1 teaspoons baking soda
  • 1 teaspoon salt
  • 3 cups shredded zucchini
  • 1 cup vegan chocolate chips

Directions

Step 1: Preheat the oven to 350F (175C). Spray a 9-inch square pan with cooking spray.

Step 2: In a large bowl, combine white sugar, brown sugar, and olive oil. Beat with an electric mixer until the mixture is smooth and well combined.

Step 3: Add the vanilla extract and mix it in thoroughly.

Step 4: Slowly add the flour, cocoa powder, baking soda, and salt. Mix until all ingredients are fully combined. Note: the batter will be dry at this point.

Step 5: Stir in the shredded zucchini and continue mixing with a spoon until the zucchini is evenly distributed throughout the batter. Let the mixture sit for about 5 minutes, allowing it to become more moist.

Step 6: Once the batter has softened, stir in the vegan chocolate chips until well combined.

Step 7: Transfer the batter into the prepared 9-inch square pan and spread it evenly.

Step 8: Bake in the preheated oven for 25 to 30 minutes, or until the top is dry and the edges begin to pull away from the sides of the pan.

Step 9: Allow the bars to cool completely before slicing into squares.
