Red Velvet Cake with Beets Recipe

Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 cups white sugar
  • 1 cup buttermilk
  • 1 cup pureed cooked beets
  • cup vegetable oil
  • 2 eggs
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon vinegar
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Directions

Step 1: Preheat your oven to 350F (175C). Line a 9x13-inch cake pan with parchment paper to prevent sticking.

Step 2: In a large bowl, sift together the flour and baking powder to ensure an even distribution of ingredients.

Step 3: In another large bowl, whisk together the sugar, buttermilk, pureed beets, vegetable oil, eggs, cocoa powder, red food coloring, vanilla extract, vinegar, baking soda, and salt until fully combined.

Step 4: Gradually add the sifted flour mixture to the wet ingredients, stirring gently after each addition until the batter is smooth. Be careful not to over-mix.

Step 5: Pour the batter into the prepared cake pan. Tap the pan on the counter a few times to settle the batter and release any large air bubbles.

Step 6: Place the pan in the preheated oven and bake for about 35 minutes, or until a toothpick inserted into the center comes out clean.

Cook's Note

If you have access to "gasificante" (a mix of 1 teaspoon baking soda and 1 teaspoon malic and tartaric acid), you can use it instead of the baking powder. Be careful not to over-mix the batter to avoid a dense cake.
