Caramel Pecan Cookie Pops

Ingredients

  • cup butter, softened
  • cup confectioners' sugar
  • cup packed brown sugar
  • teaspoon salt
  • 1 egg
  • teaspoon vanilla extract
  • 2 cups all-purpose flour
  • cup miniature semisweet chocolate chips
  • 48 round wooden toothpicks
  • 1 cup finely chopped pecans
  • 1 (11 ounce) package caramel bits (such as Kraft)
  • 2 tablespoons water

Directions

Step 1: Preheat your oven to 350F (175C). Grease your baking sheets with butter or non-stick spray.

Step 2: In a large mixing bowl, beat together softened butter, confectioners' sugar, brown sugar, and salt until the mixture becomes light and fluffy.

Step 3: Add in the egg and vanilla extract, continuing to beat until the mixture is smooth and fully combined.

Step 4: Gradually add in the all-purpose flour, mixing until the dough comes together. Stir in the miniature chocolate chips until evenly distributed throughout the dough.

Step 5: Roll the dough into 1-inch balls and arrange them about 2 inches apart on the prepared baking sheets.

Step 6: Bake in the preheated oven for 10 to 12 minutes, or until the cookies are set and slightly golden around the edges.

Step 7: Immediately after baking, press a round wooden toothpick into the center of each cookie. Allow them to cool on wire racks until fully set.

Step 8: While the cookies are cooling, place the chopped pecans in a shallow bowl. Lay a sheet of waxed paper on your work surface for easy cleanup.

Step 9: In a saucepan over medium-low heat, melt the caramel bits together with the water. Stir occasionally until the caramels are completely melted and the mixture is smooth, about 3 to 5 minutes.

Step 10: Hold each cooled cookie by the toothpick and dip it into the warm caramel, ensuring it is fully coated. Let any excess caramel drip back into the pan.

Step 11: Immediately dip the caramel-coated cookie into the chopped pecans, covering the bottom and sides. Place the cookie onto the waxed paper and allow it to cool and set.

Step 12: Repeat the dipping process for the remaining cookies until all are coated with caramel and pecans. Allow them to cool completely before serving.
