Brownie Cookie Whoopie Pies Recipe

Ingredients
- 1 (18.4 ounce) package brownie mix
- cup all-purpose flour
- 1 cup chocolate chips
- cup vegetable oil
- 2 large eggs
- 1 tablespoon multicolored candy sprinkles (optional)
- 1 cups powdered sugar
- cup unsalted butter, softened
- teaspoon vanilla extract
- (16 ounce) tub marshmallow creme
Directions
Step 1: Preheat your oven to 350F (175C). Line two baking sheets with parchment paper. Lightly spray a wire rack with cooking spray for cooling.
Step 2: In a medium bowl, combine the brownie mix and flour. Stir until well blended.
Step 3: Add chocolate chips, vegetable oil, and eggs to the mixture. Stir everything together until fully combined.
Step 4: Using a spoon, scoop 20 rounded tablespoons of the dough onto the prepared baking sheets, spacing them about 2 inches apart.
Step 5: Optionally, decorate half of the cookies with multicolored candy sprinkles for a festive touch.
Step 6: Bake in the preheated oven for 9 to 10 minutes, or until the cookies are set but still soft in the center. Remove from the oven and let cool for 2 to 3 minutes before transferring to the wire rack to cool completely, about 30 minutes.
Step 7: While the cookies are cooling, prepare the filling. In the bowl of a stand mixer, combine powdered sugar, softened butter, and vanilla extract. Mix with the paddle attachment on medium speed until the mixture is light and fluffy, about 4 minutes.
Step 8: Gently fold in the marshmallow creme, making sure its fully incorporated into the mixture.
Step 9: Transfer the marshmallow filling to a large zip-top bag and cut a small hole in one corner to pipe the filling.
Step 10: Pipe the marshmallow filling onto the center of one plain cookie. Top it with a cookie that has candy sprinkles, pressing them gently together to form a sandwich. Repeat this process with the remaining cookies and filling.

I increased the vegetable oil by 1/4 cup, and the result was a moist and delicious outcome! Make sure not to overmix and be careful with your measurements - it's crucial!

When the dough became too thick for a spoon and I had to resort to using my hands, I should have predicted that the outcome wouldn't be satisfactory. The cookies turned out unevenly baked, with the edges being overdone and the centers remaining raw. Moreover, the measurements seemed off as each cookie was only the size of one tablespoon. With a total of 58 ounces of dough, it doesn't make sense that it would yield only 20 small cookies. I'll definitely be looking for a different recipe next time.
