Poached Pears with Apricot Sauce
This delightful dessert features tender poached pears served with a rich apricot sauce and a splash of rum. Perfect for special occasions, this dish is as impressive as it is delicious!
Ingredients
- 1 cups water
- cup white sugar
- teaspoon vanilla extract
- 6 Bosc pears, peeled, halved, and cored
- 1 cup apricot preserves
- 2 tablespoons cornstarch
- 2 tablespoons water
- cup rum
Directions
Step 1: In a saucepan, bring 1 cups of water, sugar, and vanilla extract to a boil over high heat.
Step 2: Add 3 or 4 pear halves to the saucepan, then reduce the heat to medium. Let the pears simmer gently until they become just tender, about 5 minutes.
Step 3: Remove the cooked pears and transfer them to a warm chafing dish or metal serving dish. Continue cooking the remaining pears.
Step 4: Increase the heat to medium-high and bring the syrup to a boil. Let it reduce to 1 cup.
Step 5: Stir in the apricot preserves and return the mixture to a boil.
Step 6: In a small bowl, dissolve the cornstarch in 2 tablespoons of water. Stir this mixture into the simmering syrup and cook until thickened and clear, about 30 seconds.
Step 7: To serve, pour the hot apricot sauce over the pears, then sprinkle with rum.
Step 8: Carefully ignite the rum at the table, ensuring the lights are turned low for dramatic effect. Let the alcohol burn off before serving.

Fantastic presentation! The flames were a huge hit with everyone! I offered it with a choice of ice cream or table cream, and surprisingly, the table cream was my personal favorite. I'll definitely be making this dish again!

We enjoyed it. I didn't have apricot preserves, but had pear preserves on hand which I used instead - surprisingly worked well. We prefer desserts less sweet, so I reduced the sugar to 1/2 cup... I think I'll stick to a similar amount next time as well. Definitely worth making again.

Delicious! I made this without the rum and served it with sauce. It was fantastic on its own, and I'm sure it would be just as amazing with ice cream or cake.

The dessert was overly sweet for my taste. I'd recommend reducing the sugar amount or incorporating a touch of sourness or bitterness into the poaching syrup, such as using earl grey tea or lemon.

Wonderful flavor and beautiful presentation. Regrettably, a few of the pears were not fully ripe, which prevented some of my guests from enjoying them. I'll make sure to test all the pears for ripeness before serving next time!
