White Chocolate Peppermint Bark Recipe
Cook Time: 10 minutes
Ingredients:
- 2 (11 ounce) packages white chocolate chips (such as Ghirardelli)
- 12 peppermint candy canes, broken into pieces
- 1 drop peppermint oil, or as needed
Directions:
- Line an 11x17-inch baking sheet with parchment paper.
- In a microwave-safe glass bowl, melt the white chocolate chips on 50 percent power for 3 minutes. Stir well, and if the bowl is no longer warm, proceed to the next step. If necessary, continue microwaving in additional 1-minute intervals, stirring each time, until the chocolate is completely smooth.
- Once melted, stir in the broken peppermint candy canes and one drop of peppermint oil. Mix until everything is well incorporated. Taste the mixture, and if you'd like a stronger peppermint flavor, add another drop of peppermint oil.
- Pour the melted chocolate mixture onto the prepared baking sheet, spreading it evenly with a spatula.
- Refrigerate for at least 30 minutes or up to overnight, until the bark is completely set and firm.
- Once set, break the bark into pieces and store in an airtight .

Peppermint oil is available at cake supply stores and is much stronger than peppermint extract. If you prefer, you can substitute 1/4 teaspoon of peppermint extract, but keep in mind it will be less intense in flavor.
