Alexander's Chocolate-Covered Peanuts Recipe

Cook Time: 10 minutes

Ingredients

  • 18 ounces white almond bark, broken into pieces
  • 2 cups semisweet chocolate chips, or more to taste
  • 24 ounces lightly salted peanuts, or more to taste

Directions

Step 1: In a slow cooker, cook the almond bark on High, uncovered, stirring occasionally, until its mostly melted, which should take about 5 to 10 minutes.

Step 2: Reduce the heat to Low and stir in the chocolate chips. Continue cooking and stirring until the chocolate chips are fully melted and the mixture turns a dark color, about 5 to 10 minutes.

Step 3: Turn off the heat and stir in the peanuts. To test the consistency, drop a spoonful onto a piece of parchment paper. The mixture should be thick and chunky. If its too runny, add more chocolate chips and peanuts to thicken it up.

Step 4: Line several baking sheets with parchment paper. Using a melon baller or spoon, drop spoonfuls of the peanut mixture onto the prepared sheets.

Step 5: Allow the clusters to harden for about 1 hour before serving.

Cooks Note

This recipe yields a large number of peanut clusters, so be sure to clear off some counter space. If you make larger clusters, they will take longer to harden.

I made these today and they turned out perfect! I also added a sprinkling of sea salt to the tops, since I love chocolate and salt. I didn't have a 'slow cooker' so I just melted both on very low heat in a pan, which turned out just as good. I will make again

So yummy, quick and easy! It’s a great treat for guest or just you with a good movie! I did have a hard time finding the almond bark, way to go Walmart for having it.

This is an easy easy recipe and fun to make. I played with it just a bit. The first batch I sprinkled just a little coarse sea salt on top, really not much just a few grains. The second and third batches I and added a wee bit of cinnamon to one batch and a bit of instant coffee granules in another.

Good stuff. I added walnuts as well for the second half of the batch. Cools nicely and tastes so rich you’ll only want one or two.
