Scandinavian Pear Tart Recipe
Ingredients
- Crust:
- Cooking spray
- cup white sugar
- 3 tablespoons butter, softened
- cup all-purpose flour
- cup finely chopped almonds
- Filling:
- 1 (8 ounce) package cream cheese, softened
- cup white sugar
- 1 egg
- teaspoon almond extract
- 1 (15 ounce) can pears, drained and thinly sliced
- Topping:
- 1 tablespoon white sugar
- teaspoon ground cardamom
- teaspoon ground cinnamon
Directions
- Preheat the oven to 425F (220C). Lightly coat a 9-inch fluted tart pan with a removable bottom with cooking spray.
- In a small bowl, beat the white sugar and softened butter together until the mixture becomes crumbly. Stir in the flour and finely chopped almonds until combined.
- Press the mixture evenly over the bottom and up the sides of the prepared tart pan, forming the crust.
- In another small bowl, beat the cream cheese until smooth. Add in the white sugar, egg, and almond extract, and continue to beat until fully combined.
- Spread the cream cheese mixture evenly over the crust in the tart pan.
- Arrange the thinly sliced pear pieces over the cream cheese layer, ensuring they are evenly distributed.
- In a separate small bowl, combine the sugar, ground cardamom, and cinnamon. Sprinkle this mixture evenly over the pears.
- Bake the tart in the preheated oven for 10 minutes. Then, reduce the temperature to 350F (175C) and continue baking for an additional 15 to 20 minutes, or until the filling is set. An instant-read thermometer inserted into the center should read 160F (71C) when done.
- Remove the tart from the oven and cool it on a wire rack for 1 hour.
- Once cooled, refrigerate the tart for at least 2 hours before slicing and serving.

History and Origins
The Scandinavian Pear Tart has its roots in the culinary traditions of northern Europe, where tarts and pies are often made with seasonal fruits. The use of pears in desserts is particularly popular in Scandinavian countries due to their abundance in the cooler climates. Tarts like these are often seen during the fall and winter months when fresh pears are in season, and are enjoyed as a comforting treat to accompany warm beverages. The combination of cardamom, a spice closely associated with Scandinavian baking, with pears, creates a perfect blend of sweetness and warmth.
Regional Features
In Scandinavian countries, desserts often feature simple yet rich ingredients. The Scandinavian Pear Tart is a wonderful example of this tradition. Almonds are a staple ingredient in Scandinavian baking, as they bring a subtle nutty flavor that pairs well with the sweet pears. The use of cardamom in this tart is another key element of Scandinavian cuisine, as its frequently found in breads, pastries, and cookies throughout the region. The flavors are warm, aromatic, and familiar, making it a beloved treat in many Scandinavian households.
Differences from Similar Dishes
Unlike other fruit tarts, which may use a buttery pastry crust, the Scandinavian Pear Tart features a crumbly almond crust that adds both texture and flavor. The addition of cream cheese in the filling creates a rich and creamy base, distinct from more common tart fillings like custard or fruit-only fillings. The use of cardamom and cinnamon also sets this tart apart, giving it a unique spicy-sweet flavor profile that is unmistakably Scandinavian. The pear, while sweet and soft, holds its shape during baking, ensuring a pleasant bite in every slice.
Where It's Typically Served
The Scandinavian Pear Tart is often served during special occasions such as family gatherings, festive celebrations, or holiday dinners. It pairs wonderfully with coffee or tea, making it a perfect addition to an afternoon fika, a Swedish tradition of coffee breaks enjoyed with pastries. In Scandinavian countries, you might find it in cafs or restaurants during the colder months when comfort foods are most appreciated. It's also a popular choice for dessert during Christmas and other important family events.

The almond flavor was a bit overpowering, so next time I'll use half the amount of almond extract and add more vanilla. Overall, this dessert was fantastic and a great way to use up the Asian pears from our tree.

Absolutely amazing! This dessert has quickly become a household favorite. I am surprised that it only has three reviews, which is why I am taking the time to write my very first one. I followed the recipe exactly as written and the result was both stunning and delicious. It is important to use a special tart pan with a removable bottom for this recipe. I managed to find one that is 11 inches instead of the recommended 9 inches, so I adjusted the ingredients accordingly and it turned out perfectly. When you reach Step 3, make sure to use almond extract instead of vanilla, as there seems to be a typo in the ingredients list. I highly recommend giving this recipe a try - you won't be disappointed!
