This was my first attempt ever at gingerbread. I refrigerated it for 1.5 days because I got busy, and the dough kept well wrapped in plastic wrap. YUMMY flavor--my 2.5-year-old and I both love them! I didn't have enough molasses on hand, so I used probably about 2 Tbsp of corn syrup to make up for what I was missing. It didn't seem to cause a problem. For the other gingerbread virgins out there, here is my advice: first of all, when you take the dough out of the fridge, it will seem rock hard. Don't panic, it softens as you roll it. Only roll out 1/2 at a time as it gets very soft, very fast. Second of all, don't forget to MOVE the cookies to a wire rack after 1-2 minutes as listed. I got busy with my toddler and forgot, and my first batch stuck pretty good to my cookie sheets. I had to be careful to not crack them to pieces when removing them. With the next batches, I removed them after 1 minute with no problems at all. Happy baking!

I followed this recipe as written, only change I made was to double the cinnamon to two teaspoons. I have two helpful hints. You can avoid the dough being sticky by dusting your hands, surface and roller with flour while handling and rolling it. Second, roll out the dough directly onto parchment paper, then, after cutting and removing excess dough, just slip the p. paper onto the cookie sheet. That way you don't misshape the cookies by moving them on a spatula. If you like crispy cookies, roll them on the thin side. I used "Brer Rabbit" mild flavor molasses and they tasted great. This was my first time making gingerbread men. I used M&Ms for buttons and indented eyes and smile into the face dough. Was really fun to have them come out looking so cute!!

Excellent recipe. I used Golden Syrup instead of molasses. Baked for about 10 minutes at 175 C. The dough was chilled overnight and kneaded again and rolled into a sheet. The taste, sweetness, texture everything was perfect. I used dry ginger powder.

Recipie was easy and the cookies turned out perfect! I didnt want to wait the 4 hours of refridgeration that the dough needed, so I put the dough in the freezer for 1hr until it got firm enough to roll. I rolled out the dough and they were pretty easy to cut. I wanted my cookies on the softer side so I baked them for 8 minutes exact. Thanks for the recipe ❤️

The dough was too sticky. First I could not contain it in plastic wrap and it never got stiff. After 5 hours I took it out of the fridge and it was still so sticky, I had to use a butter knife to get a the dough of tbe cellophane. I kneeded more flour into it until I could finally roll it out and be able to life the gingerbrea men off the counter. They rose and baked up well after the addition of lots more flour.

My first time making ginger bread cookies and they came out good. I chilled the dough overnight and used a 2 1/2 inch round cookie cutter. I also increased the baking time to 13 minutes and they came out soft with crisp edges.

Cookie dough was phenomenal. I replaced the nutmeg with cloves and the molasses with honey. The cookies came out nice and crisp, but the sweetness was a little underwhelming. Still, it's the best gingerbread cookie recipe I've come across. I ended up adding some homemade buttercream on top to make up for the lack of sweetness. Plus it's very kid friendly! Made this with my little sister (3 years old) and she had a great time.

I followed the recipe for thumbprint cookies but without the nuts or caramel. Instead, I flattened them with the bottom of a glass and once baked and cooled, I spread a thin layer of Nutella on the bottom of one cookie and topped it with another to make a sandwich cookie. I decorated them with royal icing and red or green sanding sugar.

I did make changes based on others' recommendations but I loved the cookies and so did my youngest boy! I doubled the spices (except the salt) and added some ground clove, same as nutmeg. The dough kept shape very well and days later the cookies are still great.

i didn’t have any butter in my fridge so i used shortening . ( i use shortening in my famous chocolate chip cookies) They were delicious!!!!!!
