This cocktail blends fresh raspberries, thyme, and gin into a refreshing, slightly sweet drink perfect for any occasion. Follow these simple steps to create a delicious and aromatic beverage that will impress your guests.

Ingredients

  • 5 fresh raspberries
  • 1 sprig fresh thyme
  • 1 ounces gin
  • 1 pasteurized egg white
  • fluid ounce simple syrup
  • fluid ounce lemon juice
  • Ice cubes
  • 1 pinch ground cinnamon
  • 1 lemon zest curl (for garnish)

Directions

  1. In a cocktail shaker, muddle the raspberries and thyme to release their flavors.
  2. Add the gin, egg white, simple syrup, and lemon juice to the shaker.
  3. Shake the mixture vigorously until it no longer sounds sloshy and you feel significant pressure.
  4. Fill the shaker halfway with ice and shake again until the mixture is very cold.
  5. Strain the cocktail into a coupe or cocktail glass.
  6. Garnish the drink by dusting the top with cinnamon or adding a lemon zest curl or a sprig of thyme.

Cook's Notes

For a convenient option, you can use 1 ounce of pasteurized liquid egg whites as a substitute for the regular egg white.

To make your own simple syrup, combine 1 cup sugar and 1 cup water in a Mason jar. Shake until the sugar is dissolved. If your arm gets tired, just set the jar aside, and the sugar will dissolve naturally. Store the syrup in the fridge for up to 3 weeks.
