Ingredients
- 1 tablespoon butter
- 1 onion, chopped
- cup cubed cooked ham
- 2 garlic scapes, sliced
- 6 large eggs
- cup milk
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- cup shredded white Cheddar cheese, divided
Directions
- In a large skillet, melt the butter over medium heat. Add the chopped onion, cubed ham, and sliced garlic scapes. Cook for about 5 minutes, or until the onion becomes tender and fragrant.
- In a separate bowl, beat together the eggs, milk, salt, and black pepper until well combined. Pour the mixture into the skillet with the cooked onion and ham.
- Stir the eggs continuously, cooking them gently until they are almost set but still slightly moist. This will take about 3-4 minutes.
- Sprinkle cup of the shredded cheddar cheese over the eggs, and continue to cook and stir until the eggs are fully set, about 5 minutes.
- Once the eggs are cooked through, top them with the remaining cup of cheddar cheese. Let it melt before serving.
