Blueberry Lemon Breakfast Biscuits Recipe

Blueberry Biscuits with Lemon Glaze
Ingredients
- 1 (10 ounce) can refrigerated buttermilk biscuit dough (such as Pillsbury)
- 1 cup blueberries
- cup confectioners' sugar
- 1 tablespoon lemon juice
- teaspoon grated lemon zest
Directions
- Preheat the oven to 350F (175C). Line a cookie sheet with parchment paper.
- Remove the biscuits from the can and split each in half crosswise to make a total of 10 biscuits.
- Place 5 of the biscuits on the prepared cookie sheet.
- Evenly distribute the blueberries over the 5 biscuits.
- Cover the blueberries with the remaining 5 biscuits, forming little sandwich pockets.
- Bake in the preheated oven for 18 to 22 minutes, or until the biscuits are golden brown.
- Allow the biscuits to cool for 5 minutes on the sheet.
- While cooling, mix the confectioners' sugar, lemon juice, and lemon zest in a small bowl to create the glaze.
- Brush half of the glaze over the tops of the warm biscuits and let it sit for 5 minutes to set.
- Brush the remaining glaze over the biscuits, and let it sit until fully set.
- Enjoy your blueberry biscuits with a tangy lemon glaze!
Tips
- Frozen blueberries work perfectly, but fresh blueberries can be used as well. You can also experiment with different berries.
- If you prefer, substitute milk for the lemon juice and omit the zest from the glaze.
