Blueberry Lemon Breakfast Biscuits Recipe

Blueberry Biscuits with Lemon Glaze

Ingredients
  • 1 (10 ounce) can refrigerated buttermilk biscuit dough (such as Pillsbury)
  • 1 cup blueberries
  • cup confectioners' sugar
  • 1 tablespoon lemon juice
  • teaspoon grated lemon zest
Directions
  1. Preheat the oven to 350F (175C). Line a cookie sheet with parchment paper.
  2. Remove the biscuits from the can and split each in half crosswise to make a total of 10 biscuits.
  3. Place 5 of the biscuits on the prepared cookie sheet.
  4. Evenly distribute the blueberries over the 5 biscuits.
  5. Cover the blueberries with the remaining 5 biscuits, forming little sandwich pockets.
  6. Bake in the preheated oven for 18 to 22 minutes, or until the biscuits are golden brown.
  7. Allow the biscuits to cool for 5 minutes on the sheet.
  8. While cooling, mix the confectioners' sugar, lemon juice, and lemon zest in a small bowl to create the glaze.
  9. Brush half of the glaze over the tops of the warm biscuits and let it sit for 5 minutes to set.
  10. Brush the remaining glaze over the biscuits, and let it sit until fully set.
  11. Enjoy your blueberry biscuits with a tangy lemon glaze!
Tips
  • Frozen blueberries work perfectly, but fresh blueberries can be used as well. You can also experiment with different berries.
  • If you prefer, substitute milk for the lemon juice and omit the zest from the glaze.
