Hearty Breakfast Casserole Recipe

Cook Time: 60 minutes

Ingredients

  • 1 (16 ounce) package ground pork breakfast sausage
  • 8 large eggs
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cups milk
  • 1 (4.5 ounce) can sliced mushrooms, drained
  • 1 (32 ounce) package frozen potato rounds
  • cup shredded Cheddar cheese

Directions

Step 1: Preheat the oven to 350F (175C). Lightly grease a 9x13-inch baking dish.

Step 2: In a skillet, cook the sausage over medium-high heat until browned and cooked through. Drain any excess fat and set the sausage aside.

Step 3: In a large mixing bowl, beat together the eggs, cream of mushroom soup, and milk until well combined.

Step 4: Stir in the cooked sausage and sliced mushrooms into the egg mixture. Mix thoroughly.

Step 5: Pour the egg and sausage mixture into the prepared baking dish. Add the frozen potato rounds and stir them in until evenly distributed.

Step 6: Bake in the preheated oven for 45 to 50 minutes, or until the casserole is heated through and the eggs are set.

Step 7: Sprinkle the shredded Cheddar cheese over the top and return the dish to the oven. Bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Rewritten review: I was pleasantly surprised by how delicious this dish turned out! Initially, I was hesitant about using mushroom soup in the recipe, but it actually added a wonderful depth of flavor to the casserole. To elevate the dish, I included sautéed red bell pepper, onion, and fresh mushrooms, seasoned with a mix of black pepper, salt, parsley, and garlic. I also opted for diced hash brown potatoes that were seasoned with garlic, onion powder, salt, black pepper, and parsley, pan-fried in olive oil before baking to enhance their texture. Creating layers of potatoes, sausage, veggies, and cheese made for a satisfying meal. I poured the egg mixture over the casserole and topped it off with an additional sprinkle of cheese before baking it for approximately 1 hour and 10 minutes. I covered it for the first 20 minutes and allowed it to rest for a few minutes before serving. Served with salsa, the dish was a hit! Thank you for sharing this fantastic recipe!

This dish has become a beloved tradition in our family. My husband and kids eagerly anticipate it on Easter and Christmas mornings. While I mostly stick to the original recipe, I like to sauté green pepper, onion, mushroom, and garlic with the sausage for an extra burst of flavor. I prepare the baking dish by greasing it and layering the potatoes, followed by the sausage and vegetables. Mixing cheese into a blend of eggs, milk, and soup, I season with salt and pepper before pouring it over the casserole. After baking for 55 minutes, I allow it to sit for 10 before serving.

Absolutely delicious! I prepared this dish with ground chicken sausage, sautéed with minced onion and garlic, then seasoned with ground sage and cooked with fresh mushrooms. I opted for skim milk and low-fat cream of mushroom soup, and also added frozen potato rounds. After baking for an hour and a quick sprinkle of paprika on top, I finished it off with shredded cheddar cheese and a final five-minute bake. The end result was incredibly flavorful. This recipe offers endless possibilities for experimenting with spices, meats, and cheeses.

I made this dish for Christmas breakfast and it was a huge success! I swapped out the bread for hash browns and it turned out delicious.

I prepare this casserole every Christmas morning! I leave out the mushrooms but add bacon instead. It can be completely customized to your liking:)

I prepare this dish for my family every Christmas! We use turkey sausage instead and include onions, peppers in the egg mix, along with a dash of pepper, staying true to the original recipe. It's a big hit with everyone!
