Banana Crumb Muffins Recipe

Ingredients

Muffins:

  • 1 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • teaspoon salt
  • 3 bananas, mashed
  • cup white sugar
  • cup butter, melted
  • 1 egg, lightly beaten

Crumb Topping:

  • cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter

Directions

Step 1: Gather all ingredients. Preheat your oven to 375F (190C). Lightly grease or line 10 muffin cups with paper liners.

Step 2: In a large mixing bowl, combine the flour, baking soda, baking powder, and salt.

Step 3: In a separate bowl, beat the mashed bananas, white sugar, melted butter, and lightly beaten egg until well combined.

Step 4: Stir the banana mixture into the dry ingredients just until combined. Be careful not to overmix.

Step 5: Spoon the batter into the prepared muffin cups, filling each about full.

Step 6: For the crumb topping, mix together brown sugar, flour, and cinnamon in a small bowl. Use a fork to cut in 1 tablespoon of butter until the mixture becomes crumbly.

Step 7: Sprinkle the crumb topping evenly over the batter in each muffin cup.

Step 8: Bake in the preheated oven for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9: Let the muffins cool for a few minutes before serving. Enjoy!

OH MY GOODNESS!!!! I would give this recipe 10 stars if I could!!!!! I followed the recipe exactly and the result was truly outstanding! My husband insisted that we must include this recipe when we open our Bed and Breakfast. I used 4 small to medium very ripe bananas and ended up with 11 muffins. The topping was the perfect amount to complement the muffins. Thank you so much for sharing this now family favorite and go-to recipe!!! Simply calling them delicious doesn't even begin to describe how amazing they are! Enjoy! Note: 1-10-04 I wanted to update and let you all know that I made a double batch today and it yielded 4 mini loaves, which baked at 350 degrees for 30 minutes. I hope this information is helpful for someone out there.

I added blueberries and walnuts to half the mixture as my husband prefers plain banana muffins. I also used giant muffin pans lined with paper and adjusted the baking time accordingly.

This recipe turned out amazing! I baked them in a mini muffin pan for 15 minutes and added chocolate chips. Other than that, I followed the recipe exactly as written. The result was really delicious!

I absolutely loved it, although I made a couple of adjustments. I only had 2 bananas, so I included 1 teaspoon of vanilla extract and 1.5 teaspoons of banana extract. I skipped the cinnamon in the crumble topping, but instead, I sprinkled on some chopped pecans. The end result was incredibly delicious and moist. Definitely a recipe worth keeping!

They were excellent! Delightfully light in texture. Personally, I prefer a slightly denser, more moist cake, but these received rave reviews from everyone who tasted them. I am considering adding some brown sugar to the batter next time. The recipe recommends filling 10 cupcake cups three-quarters full, but it actually makes a full dozen cupcakes when filled to that level.

My grandson and I baked these together. We stuck to the recipe but skipped the topping, which I'll definitely include next time. He gave them a 10/10 rating. I'm thinking of trying them with monk fruit next time to lower the sugar content.
