Chocolate Coconut Overnight Oats Recipe

Ingredients

  • 1 cup chocolate-flavored almond milk
  • cup old-fashioned rolled oats (such as Quaker)
  • 1 tablespoon chia seeds
  • 1 tablespoon packed shredded sweetened coconut
  • 1 tablespoon maple syrup
  • 1 tablespoon unsweetened cocoa powder
  • 1 splash vanilla extract

Directions

Step 1: In a 12-ounce mason jar, combine the almond milk, rolled oats, chia seeds, shredded coconut, maple syrup, cocoa powder, and vanilla extract.

Step 2: Stir the mixture until all ingredients are well incorporated.

Step 3: Cover the jar and refrigerate for at least 8 hours, or preferably overnight, to allow the oats to soak and the flavors to meld.

Step 4: After the resting time, give the mixture a good stir and serve cold.

Recipe Tip

If you prefer, you can substitute cashew milk for almond milk in this recipe for a slightly different flavor.

I prepared this using regular chocolate milk without using cocoa powder, and it was absolutely delicious! I included chopped frozen strawberries for added fiber and flavor, and it exceeded my expectations. I definitely plan on making it again later this week!

I substituted vanilla almond milk and whole milk in this recipe, but kept everything else the same. My usually picky kids absolutely adore this breakfast! I found that the chia seeds in this dish didn't work for me. The mix of chocolate and chia wasn't to my taste. Additionally, the portion size was quite generous, possibly more than a single person would need for breakfast.
