Blueberry French Toast Casserole
Ingredients
- 1 (8 ounce) package cream cheese, softened
- 1 cup confectioners' sugar
- 2 tablespoons milk
- 1 tablespoon vanilla extract, divided
- 2 cups blueberries, divided
- 2 loaves French bread, cubed
- 2 cups milk
- 8 large eggs
- 1 teaspoon ground cinnamon
- teaspoon ground nutmeg
Directions
Step 1: Gather all ingredients to ensure you have everything on hand.
Step 2: In a large mixing bowl, combine the cream cheese, confectioners' sugar, 2 tablespoons of milk, and 1 teaspoon of vanilla extract. Stir until smooth and creamy. Gently fold in 1 cup of blueberries.
Step 3: Prepare a 10x14-inch baking dish by covering the bottom with a layer of cubed bread.
Step 4: Spread the cream cheese mixture evenly over the bread layer, then top with the remaining cubed bread.
Step 5: In a separate large bowl, whisk together 2 cups of milk, eggs, 2 teaspoons of vanilla extract, cinnamon, and nutmeg. Pour this mixture over the bread and cream cheese layers.
Step 6: Sprinkle the remaining 1 cup of blueberries over the top of the bread-egg mixture.
Step 7: Cover the dish tightly with aluminum foil and refrigerate for 8 hours, or overnight, to allow the flavors to meld.
Step 8: Before baking, remove the casserole from the refrigerator and let it sit at room temperature for 30 to 60 minutes.
Step 9: Preheat the oven to 375F (190C).
Step 10: Bake the casserole in the preheated oven for 45 minutes, then remove the foil and continue baking for an additional 30 minutes or until the center is set and golden brown.

If the cream cheese mixture is too thick, you can add a little more milk to reach the desired consistency.

Halved the recipe and made it in a bread pan. Did not use vanilla or nutmeg (ran out) and subbed real sugar for powdered sugar (half the amount total). Also used 2/3 cup blueberries total (could probably use more if you want). Turned out delicious. Baked covered for 45 minutes and uncovered about 5. I think I'll butter the pan next time the exterior turned out crispy in my nonstick pan. Oh and I only used enough French bread to fill the bread pan so I had about half a loaf left over. I could see this turning out dry if I used the whole loaf.

This recipe looked so good and I was excited about trying it for my guests. It seemed as if the custard wasn't quite enough for the amount of bread in the casserole, and, I wish I would have gone with my instinct because it was a little dry in the morning and top of the casserole was more like a dry crunchy toast. It is possible that the size of my french loaves were larger than what the author of the recipe used, but, since it just said (2) french loaves that is what I used. I did top with a homemade blueberry sauce, so, that definitely helped with the dryness. I would make this again, but, just use less bread or more custard next time.

I made this for breakfast for a long holiday weekend. After reading some of the reviews, I increased the number of eggs, and I used half and half instead of milk, more than what was called for. I used only 1 very large loaf of bread. I scattered extra blueberries over the top of the casserole, and I put weights on top of the plastic wrap to ensure that the bread was covered by the liquid. Also, I bought some blueberry syrup and poured that over it when serving it. Next time I make it, I will remember to spray the dish with non-stick cooking spray. This was over the top delicious, and I'm planning to make it again for our Sunday brunch at church on July 31st.

I have made this many times and I had to change a few things. Double the amount of cream cheese mixture if you’re doing a 9x13 pan add extra blueberries too. Also I found that assembling the casserole as instructed leaves an uneven distribution of egg mixture and some pieces of bread come out dry and hard. I take half the bread cubes and half the egg mixture combine then add to the pan, spread cream cheese mixture then repeat the same process of premixing the rest of the cubes and egg mixture then add to the pan. This gives a much better result,

I cut the recipe in half (except used all of the blueberries) because there are only 2 of us. I used store-bought "Texas toast" and cut 8 slices into roughly 1 inch chunks. To bake, I used a deep casserole dish and used the same timing. With the "Texas toast," this came out more like bread pudding, but it was simply delicious. I will definitely make it again. BTW...I also made a simple blueberry syrup to pour over it.

Left out the cinnamon and nutmeg. Added almond extract, semi sweet mini chocolate chips, and slivered almonds. I reconstituted some dried cherries and made a chocolate cherry version. I came out awesome!

I wish that I'd gone with my first instinct to grease the dish in preparation! My Casserole dish will never be the same. This is a very tasty recipe, and it will feed an "army"! I used one store bought French baguette, and one was all it took! Can't imagine using two. It would simply be too dry. I did add an additional cup of berries on top. Glad that I did! It was a hit with family and friends. Certainly will make it again!

Made this the morning of the 4th of July. Pay attention to the amount of bread. Although I did buy 2 loaves of french bread I ended up using about 1 1/2 otherwise it would have been to much for the eggs and milk to absorb. Delicious and recommend drizzling pure maple syrup over it. Great recipe!

Has become a special requested brunch item! I use 1/2 & 1/2 instead of milk, & sometimes have substituted bread with day old bakery cocktail size croissants. I also used 9 eggs. It has a luscious consistency, but is not "sickening" sweet. I agree with the author of the recipe, Joshua; It's great with maple (pure) syrup, whipped cream or nothing at all!! I have also tried it with blackberries. Yum!!

Excellent and everyone loved it ! I doubled up on the cream cheese mixture so that it would cover the French bread. I added extra blueberries because we had just picked 7 pounds of them from our 4 blueberry bushes ! This dish did not need a topping of any kind when served. I will definitely make this again and again, and most certainly on Christmas morning ! Thank you for this awesome recipe !

Made just as written except I added more blueberries. It was ok - I didn't enjoy the texture of the cream cheese, and it didn't have a ton of flavor. I won't make it again.

Delicious! Not overly sweet so good served with powder sugar or syrup. I used half-n-half in cream cheese and increased the cream cheese mixture. Following other reviews I increased eggs (12) and milk (2.5c), plus added extra vanilla & cinnamon and omitted nutmeg (didn't have it.) Would make again with extra blueberries.

You do need to grease the pan. I used two loaves of brioche. Added two more eggs, could probably add four more eggs and milk, or maybe less bread. Would double the cream cheese filling next time. It was very good though, not too sweet

I make this for church breakfast and always disappears. You can use canned blueberries pie filling to save time. I also use other pie fillings and doubling the recipe doesn’t require any adjustment.
