Freezer-Friendly Frittata Recipe

Ingredients

- Cooking spray
- 10 large eggs, beaten
- 1 medium onion, chopped
- 1 (10 ounce) package fresh mushrooms, chopped
- pound chopped fully cooked ham
- 1 cup milk
- 1 cup shredded Colby-Jack cheese
- cup crumbled goat cheese
- cup chopped cooked bacon
- cup shredded Parmesan cheese
- Salt and ground black pepper to taste
Directions
- Preheat the oven to 375F (190C). Lightly coat a deep 9x13-inch baking dish with cooking spray.
- In a large bowl, combine the beaten eggs, chopped onion, mushrooms, ham, milk, Colby-Jack cheese, and goat cheese. Mix well until everything is fully incorporated.
- Pour the egg mixture into the prepared baking dish, ensuring it's evenly spread out.
- Top the mixture with chopped bacon, shredded Parmesan cheese, and a sprinkle of salt and pepper to taste.
- Bake in the preheated oven for about 30 minutes, or until the eggs are fully set and the edges are golden brown.
- Allow the frittata to cool slightly before slicing it into 8 pieces. Serve and enjoy!
To Freeze Frittata:
Place the frittata slices on a baking sheet in the freezer until frozen solid. Once frozen, transfer the pieces to an airtight and store in the freezer until ready to eat.
To reheat, place frozen frittata pieces on a baking sheet and bake in a preheated 275F (135C) oven for about 20 minutes, or until heated through.
