Momma's McBiscuits Recipe

Ingredients

  • 1 (12 ounce) package bacon
  • 1 (10 ounce) can refrigerated large flaky layer biscuits
  • 6 eggs, beaten
  • 2 tablespoons milk
  • 6 tablespoons shredded Cheddar cheese
  • Salt and ground black pepper to taste

Directions

  1. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels. When cooled, chop the bacon into small pieces.
  2. Preheat the oven to 350F (175C).
  3. Separate the biscuits and pull each biscuit into halves. Press two biscuit halves into each muffin cup, molding the dough to the inside to form a dough cup. Repeat with the remaining dough to make 12 biscuit cups.
  4. In a bowl, whisk the eggs and milk together until thoroughly combined.
  5. Spoon about half of the egg mixture into each biscuit cup, filling each about halfway. Then top each with about 1 tablespoon of bacon and 1 1/2 teaspoons of Cheddar cheese.
  6. Bake in the preheated oven for about 20 minutes, or until the biscuit crust is golden brown, the cheese is melted and bubbly, and the egg center is set.

I made some modifications to the recipe. Instead of dividing the biscuit dough, I pulled it out and laid it over the cupcake tin, folding it in and pricking the bottom with a fork. I started by adding a bit of shredded cheese, followed by the egg. In addition to bacon, I diced some onion and yellow/red pepper, similar to what I do in an omelet. Since my group enjoys spicy food, I chopped up a jalapeno as a final add-in along with more cheese.

This recipe was a big hit with my family! I didn't have bacon, so I substituted turkey sausage and chopped it into small pieces instead. We also made cornmeal gravy and regular sausage as a side dish (someone was hesitant about the turkey gravy). When it was ready, we poured the gravy on top and oh my goodness, we ran out of gravy quickly! It was perfect with the biscuits. We did have a lot of leftover egg mixture, so next time I'll use half the amount. Overall, it was a fantastic meal. We will definitely be making it often now.

What a fantastic result! I couldn't locate the 10 oz can of layered biscuits, so I opted for a larger one with honey butter flavor. I think it was called Grands? I ended up making 16 biscuits with some extra egg left over. I made a mistake with the first two by cutting them in half at the center of the biscuit (a bit of a blonde moment on my part), but realized it's better to cut them in layers. I appreciate that they can be saved and reheated later. Definitely planning to make this again!

I used only 4 extra large eggs and still had egg running over the cups despite raising the sides like you would with a pie crust. The egg overflowed the edges and spilled into the oven, creating a mess. I won't be attempting this recipe again; I'll stick to making quiche instead. Your mileage may vary.
