Roasted Tomatillo and Garlic Salsa Recipe

Ingredients

  • 1 pound fresh tomatillos, husks removed
  • 1 head garlic cloves, separated and peeled
  • 3 fresh jalapeno peppers
  • 1 bunch fresh cilantro
  • cup water, or as needed
  • Salt and pepper to taste

Directions

  1. Preheat the oven's broiler. Arrange the whole cloves of garlic, tomatillos, and jalapenos on a baking sheet.
  2. Place the baking sheet under the broiler and cook for a few minutes. Keep an eye on the garlic and remove it first once it's toasted to avoid bitterness.
  3. Continue to roast the jalapenos and tomatillos, turning them occasionally, until they are evenly charred.
  4. Remove the ingredients from the oven and set them aside to cool. Do not remove the charred parts of the tomatillos and peppers, as they contribute to the overall flavor.
  5. Once cooled, transfer the peppers, tomatillos, garlic, and cilantro into a blender. If needed, add a little water to help blend the mixture smoothly.
  6. Season the mixture with salt and pepper to taste.
  7. Refrigerate the salsa until ready to serve.
