Roasted Tomatillo and Garlic Salsa Recipe

Ingredients
- 1 pound fresh tomatillos, husks removed
- 1 head garlic cloves, separated and peeled
- 3 fresh jalapeno peppers
- 1 bunch fresh cilantro
- cup water, or as needed
- Salt and pepper to taste
Directions
- Preheat the oven's broiler. Arrange the whole cloves of garlic, tomatillos, and jalapenos on a baking sheet.
- Place the baking sheet under the broiler and cook for a few minutes. Keep an eye on the garlic and remove it first once it's toasted to avoid bitterness.
- Continue to roast the jalapenos and tomatillos, turning them occasionally, until they are evenly charred.
- Remove the ingredients from the oven and set them aside to cool. Do not remove the charred parts of the tomatillos and peppers, as they contribute to the overall flavor.
- Once cooled, transfer the peppers, tomatillos, garlic, and cilantro into a blender. If needed, add a little water to help blend the mixture smoothly.
- Season the mixture with salt and pepper to taste.
- Refrigerate the salsa until ready to serve.
