Mini Mushroom and Goat Cheese Tarts

Ingredients

  • sheet puff pastry
  • 3 tablespoons butter
  • pound mushrooms, sliced
  • 2 cloves garlic, crushed
  • cup crumbled goat cheese
  • 4 teaspoons finely chopped fresh parsley

Directions

Step 1: Preheat the oven to 400F (200C) and lightly grease a baking tray.

Step 2: Roll out the puff pastry on a lightly floured surface and cut it into 8 squares. Prick the squares several times with a fork.

Step 3: Arrange the puff pastry squares on the prepared baking sheet and bake for 7 minutes.

Step 4: Remove the tray from the oven and flatten the squares using the backside of a spatula. Return to the oven and bake for an additional 5 minutes, or until golden brown.

Step 5: While the puff pastry is baking, melt the butter in a skillet over medium-high heat. Add the sliced mushrooms and crushed garlic, cooking and stirring until the mushrooms are tender (about 5-7 minutes). Remove from heat.

Step 6: Once the puff pastry is done, top each square evenly with the mushroom mixture. Crumble the goat cheese over the mushrooms and sprinkle with finely chopped parsley.

Step 7: Serve the puff pastry squares warm.

Cooks Note

If you don't have goat cheese, feta can be used as a tasty alternative.
