Cranberry Chipotle Meatballs Recipe
Ingredients

- 1 (16 ounce) package frozen cooked meatballs, thawed
- 1 (16 ounce) can jellied cranberry sauce
- 1 (15 ounce) can pineapple chunks, drained
- cup packed brown sugar
- 1 canned chipotle chile in adobo sauce, chopped - or more to taste
Directions
- Place the meatballs into a slow cooker.
- In a bowl, roughly mash the cranberry sauce, then mix it with the pineapple chunks, brown sugar, and chopped chipotle chile.
- Pour the prepared sauce over the meatballs in the slow cooker and stir to combine evenly.
- Cover the slow cooker, set it to the Low heat setting, and cook for 4 to 5 hours, or until the sauce has thickened and the meatballs have absorbed the flavors.
- Serve with toothpicks and enjoy!

Outstanding! I stuck to the recipe with the exception of not draining the pineapple tidbits and crafting my own meatballs. I added roughly 1 tbsp. of adobe pepper, resulting in a delectable blend of sweet and spicy flavors in the sauce. As it simmered in the saucepan, I couldn't resist sampling the addictive sauce. Delicious! I had some meatball mix to use up, so I opted for fresh meatballs instead. I only used half adobo and half Sweet Baby Ray's BBQ sauce as I'm not great with spicy food. It turned out so delicious. This dish has definitely earned a spot on my list of favorites!

I utilized the entire can of chipotle peppers, and the spiciness level was perfect. I also decided to double the recipe since we had more than 2 people to feed. I tried out a few suggestions and these were a hit with everyone! I kept the pineapple juice and used 1 chipotle pepper along with 2 tablespoons of adobo sauce. I prepared this dish for a gathering and it was a hit with everyone! I purchased the meatballs from Sam's Club. If you're making this for a potluck, I recommend doubling the recipe. I mostly stuck to the instructions, except I didn't drain the juice from the canned pineapple. I opted for the variety in 100% juice rather than heavy syrup. When doubling the recipe, I only used 3 chilies and a bit of the sauce for a subtle hint of heat without it being too intense. I will definitely be making this again. I absolutely love this sauce! It has a delightful and distinct flavor that surprised me. I thought it might have a more seasonal taste because of the cranberry sauce, but it's actually perfect for any time of year (not that cranberry sauce isn't fantastic year-round). I used some homemade frozen meatballs, added two chipotles and two teaspoons of adobo sauce. I forgot to drain the pineapple, and as a result, it turned out very, very spicy. Surprisingly, my boyfriend, who doesn't typically enjoy spicy food, now considers it his new favorite dish. I think I'll go with just one chili next time, even though I saw some reviews where people mistakenly added the entire can, so I thought two peppers would be okay. Lesson learned! Despite the spiciness, the overall flavor was wonderful. I served it over plain white rice to make it a main course rather than an appetizer. The pineapple juice definitely added a generous amount of sauce to the dish, which worked out perfectly. This recipe is a keeper for sure!

I prepared this recipe for a Christmas get-together. I was a bit unsure about the amount of chili peppers in adobo sauce to use. Ultimately, I finely minced 1-2 peppers and added plenty of the juice from the can for a double batch. The dish was a major success! I must point out that it seems many reviewers misinterpreted the recipe, thinking it calls for 1 can of chipotle chili peppers instead of 1 canned chipotle chili pepper. There is quite a significant difference between the two.

This was surprisingly amusing. I only noticed that the recipe actually required one chile instead of a whole can after going through the reviews. Unintentionally, I used the whole can, and to my delight, everyone enjoyed the dish. The dish turned out to be delightfully spicy, but as fans of spicy food, it was just perfect for us. Additionally, I discovered that whole cranberry sauce was an excellent alternative.
