Asparagus Wrapped in Prosciutto
This simple yet elegant dish is a perfect appetizer or side for any meal. The rich saltiness of prosciutto pairs wonderfully with the tender crispness of roasted asparagus, creating a delightful combination of flavors.
Ingredients
- 1 tablespoon olive oil
- 16 spears fresh asparagus, trimmed
- 16 slices prosciutto
Directions
- Preheat the oven to 450F (220C). Line a baking sheet with aluminum foil and lightly coat it with olive oil.
- Take one slice of prosciutto and wrap it around each asparagus spear. Start at the bottom of the spear and spiral the prosciutto up to the tip. Repeat for all 16 asparagus spears.
- Place the wrapped asparagus spears onto the prepared baking sheet in a single layer.
- Transfer the baking sheet to the preheated oven and bake for 5 minutes.
- After 5 minutes, remove the pan from the oven and gently shake it to roll the spears over, ensuring even cooking.
- Return the baking sheet to the oven and continue baking for another 5 minutes, or until the asparagus is tender and the prosciutto is crisp.
- Remove from the oven and serve immediately while still hot.

I wrapped my asparagus spears in posciutto that was smeared with cream cheese. I baked the goodies in an oven at 450 for 10 minutes and served. I wrapped the prosciutto and cream cheese around a few asparagus spears (2 or 3). It was outstanding.

I ended up buying a pound of asparagus (on the thinner side), and spiraled half a slice of prosciutto up the length of each stalk (stopping short of the tips). A whole slice would have swallowed my thin spears and I was afraid they would be wrapped too thick to get crisp. I was still left with extra asparagus, so I roasted them on a separate pan just below the pan with prosciutto. I did roast 7 minutes on each side, and added an extra two minutes of broil for the prosciutto ones to crisp that up more (this may be due to the extra pan). They were FANTASTIC. It's only been two days and I HAVE to make it again. I didn't realize until this recipe that I had previously been cooking my asparagus to death, and drowning them in olive oil. (That's why they were so limp and sad.) Really love this recipe.

I used small bunches of asparagus as a side dish. before rolling the prosciutto, I sprinkled gorgonzola cheese and a slice of red pear. the cheese added a bit of creamy savor and the pear - just a touch of sweetness. it was delicious - and the prosciutto was crisp. (325 for 20 minutes on each side) my husbands new favorite

I always smear the prosciutto with salmon cream cheese before wrapping my asparagus. AMAZING. It's important to ask the deli counter to slice your prosciutto a bit thicker than what they usually sell pre-sliced. They'll come out perfect! Ps. Spray a little black truffle oil on them after taking them out of the oven just before serving for an out of this world gastronomic experience!

SO GOOD!! I made these for a Christmas gathering, and boy I tell you what, these disappeared very quick. I split one slice of prosciutto length wise and spread a thin layer of cream cheese over it, then spiraled around 3 thin asparagus. Cook at recommended temperature for 3 minutes, shake the pan and put back in the oven an additional 2 minutes. Broil for an additional 2 minutes for added crisp. There's plenty of salt from the ham, so I don't recommend adding salt or parmesan as others have mentioned. Will be making this for every special occasion. Thinking of wrapping my scallops with this ham as well :)

Oops I hit enter by mistake on a previous review. This is the fourth time I have made this recipe and I would not change it one bit except for haps a little bit of ground black pepper. There’s no need to par boil the asparagus it cooks fine per the instructions. I tried the Parma di prosciutto from Costco as well as their bulk asparagus and that worked great. I actually cut the prosciutto lengthwise in half with a pair of kitchen scissors. They are packaged on small wax papers so this was very easy to do and it made more even slices. It was actually very good quality and much easier to work with than that from my butcher. Also keep in mind that you don’t need that much prosciutto to wrap these, and if you keep the asparagus at an angle you can wrap it with a very thin slice and the prosciutto does not overpower the asparagus.

This was a HUGE hit for the New Year's Eve party I attended! These changes made this appetizer a 5-star recipe (or else it would have been a 2-3 star recipe!) DEFINITELY take the advice of many others: smear on a generous layer of cream cheese to each slice of prosciutto. Make sure the prosciutto slices are very thin. Also - bake for only about 4 minutes total! No parmesan cheese necessary (like other reviewers recommended). It is way too salty with the parmesan cheese. A tasty, unique app! Keep in mind though...both asparagus and prosciutto can be quite pricey.

I have made these for years and they are always a hit. I usually wrap mine with either fresh grated parmasean cheese or my favorite blue cheese or a combo of both. I also spray mine with spray olive oil and Grill them. They are awesome

This is good! Then I tried this - Make it killer by spreading softened cream cheese on the prosciutto before wrapping the asparagus, it tears easy, be careful. Don't bake it, grill it. You'll be glad you did.

The recipe is OK, needs some tweaking... I had a different recipe and looked this one one up mainly to retrieve info on cooking time. The main thing is to prep the asparagus right -- wrap them in 1-2 slices of prosciutto (we used 2 for each pair of asparagi but one can wrap 3, 4 or 5 at the time depending on how much prosciutto you got). No oil in the pan, and no rolling mid way through. Just place the asparagus wraps on parchment paper, dot each bundle with a small amount of low-fat butter atop, then sprinkle grated Parmigiano cheese along the length of the bunch, then sprinkle further with paprika. Bake at 450 (but 425-430 is OK too) for 10 min without moving the asparagus prosciutto bundles and serve as is. Had it as a side dish to a NY strip steak -- excellent!

Excellent! I used 1/2 piece of proscuitto per spear, and they were perfect. Put a little cracked pepper on them before baking. They were a hit at our Christmas brunch, I will be making these for a baby shower next month! Thanks for the recipe!

I’ve been making this for years. I prefer to use prosciutto over ham and bacon.. it’s a definite keeper. Often times I make them in bundles (when the spears are very thin and tender). Occasionally, I’ll make a Swiss cheese sauce to dip them into.. any way they’re served they are always delicious.

Easy, never fail recipe that is always a hit. Sometimes the prosciutto is crispier than others--proabably has to do with the amount of oil used, and sometimes I used too much.

I was looking for a different way to prepare asparagus than the usual and this fit the bill. I'm not a big fan of prosciutto right out of the package, but crisping it made better. Some of the asparagus where still crunchy so it wouldn't hurt to cook it a little longer I think. Overall, very yummy!

I did what another reviewer suggested and smeared cream cheese on the prosciutto before wrapping it around the asparagus. I took them to a dinner party where I was responsible for appetizer and salad. Everyone wanted the recipe and more. I am not fond of asparagus and have made it 3 times within a 2 week span. I suggest squeezing a lemon over all when you take them out of the oven. Add a bit of the lemon zest if you can. Adds some color and another level of flavor.
