Original recipe (1X) yields 12 servings:

  • 12 slices Wonder Classic White Bread
  • cup light sour cream
  • 2 tablespoons orange marmalade
  • teaspoon curry powder
  • teaspoon salt
  • teaspoon black pepper
  • 1 medium rib celery, finely chopped
  • 1 green onion, finely chopped
  • red bell pepper, finely diced
  • 1 (9.75 ounce) can white chunk chicken breast, drained
  • 3 tablespoons finely chopped roasted peanuts
  • 12 red grapes, halved

Directions

Step 1: Preheat Oven

Preheat your oven to 400F (200C) to prepare for the Wonder Bread croustades.

Step 2: Prepare Bread Croustades

Trim the crusts from each slice of bread and flatten them with a rolling pin until they are about 1/8 inch thick. Using a 2 -inch round cookie cutter, cut circles from the bread. You can get two circles from each slice.

Lightly brush a mini-muffin pan with melted butter. Press each bread circle gently into a muffin cup to form a small bowl. Repeat for all circles.

Step 3: Bake Croustades

Bake the prepared bread cups for 9 to 10 minutes, or until they turn a golden brown. Remove from the oven, let cool slightly in the pan, then transfer to a wire rack to cool completely.

Step 4: Make Curried Chicken Salad

In a medium bowl, whisk together the sour cream, orange marmalade, curry powder, salt, and black pepper. Add the celery, green onion, red bell pepper, and chicken breast. Stir well, flaking the chicken into small pieces.

Gently fold in the chopped peanuts.

Step 5: Assemble Croustades

Fill each cooled bread cup with the curried chicken salad. Top each with a half red grape for a touch of sweetness and presentation.
