  • 8 potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 pound bacon, cut into 1-inch pieces
  • 3 leeks, sliced
  • 1 cup heavy cream

Directions

Step 1: Gather the ingredients.

Step 2: Place the potatoes and chicken broth in a large saucepan or stockpot. Bring it to a boil and cook until the potatoes are tender.

Step 3: While the potatoes are cooking, heat a large, deep skillet over medium-high heat. Add the bacon pieces and cook, turning occasionally, until evenly browned. Drain the bacon on paper towels and reserve 3 tablespoons of the bacon drippings in the skillet. Discard the rest of the drippings.

Step 4: Add the sliced leeks to the skillet with the reserved drippings. Saut the leeks for 8 to 10 minutes, stirring occasionally, until they are soft and slightly caramelized.

Step 5: Once the potatoes are tender, stir in the heavy cream, cooked bacon, and sauted leeks. Stir until everything is well combined. Remove the skillet from heat.

Step 6: Serve the dish hot and enjoy!
