Potato and Leek Soup Recipe

Original recipe (1X) yields 8 servings
- 1 cup butter
- 2 leeks, cleaned and sliced
- Salt and pepper to taste
- 1 tablespoon cornstarch
- 1 quart chicken broth
- 4 cups Yukon Gold potatoes, peeled and diced
- 2 cups heavy cream, or to taste
Directions
Step 1: In a large pot, melt butter over medium heat. Add the leeks and season with salt and pepper. Cook and stir until the leeks become tender, which should take about 15 minutes.
Step 2: Stir the cornstarch into the chicken broth and then pour the mixture into the pot with the leeks. Add the diced potatoes and bring the mixture to a boil.
Step 3: Once the broth is boiling, stir in the heavy cream. Reduce the heat and let the soup simmer for about 30 minutes or until the potatoes are tender.
Step 4: Before serving, check the seasoning and adjust as needed.
Cooks Note: Garnish with fresh thyme, sliced green onions, or add a pinch of cayenne pepper if you want some heat.
