Seafood Chowder

Ingredients
- 1 (8 ounce) fat-free cream cheese
- 1 cups fat-free milk
- 2 cloves garlic, minced
- 1 (23 ounce) can fat-free condensed cream of mushroom soup
- 1 (15.25 ounce) can whole kernel corn, undrained
- 1 cups potatoes, chopped into small cubes
- 1 cup chopped green onions
- 1 cup diced carrots
- 1 teaspoon dried parsley
- teaspoon ground black pepper
- teaspoon ground cayenne pepper
- pound shrimp
- pound bay scallops
- pound crabmeat
- pound calamari tubes
- 1 (6.5 ounce) can chopped clams
Directions
- Gather all the ingredients for the recipe to ensure everything is ready to go.
- In a large pot, combine the fat-free cream cheese, cup of milk, and minced garlic over low heat. Cook, stirring occasionally, until the mixture is smooth and blended, about 3 minutes.
- Next, add the condensed cream of mushroom soup, undrained corn, the remaining 1 cup of milk, diced potatoes, chopped green onions, carrots, dried parsley, black pepper, and cayenne pepper. Stir everything together until well combined.
- Let the chowder simmer for about 25 minutes, stirring occasionally. Be sure to keep the heat low enough to prevent the chowder from boiling.
- Add the seafood: shrimp, scallops, crabmeat, calamari, and chopped clams. Stir gently, then cook for an additional 10 minutes, or until the seafood turns opaque.
- Once the seafood is cooked through, taste the chowder and adjust seasoning as needed. Serve hot, garnished with additional green onions or parsley if desired.
