Seafood Chowder

Ingredients

  • 1 (8 ounce) fat-free cream cheese
  • 1 cups fat-free milk
  • 2 cloves garlic, minced
  • 1 (23 ounce) can fat-free condensed cream of mushroom soup
  • 1 (15.25 ounce) can whole kernel corn, undrained
  • 1 cups potatoes, chopped into small cubes
  • 1 cup chopped green onions
  • 1 cup diced carrots
  • 1 teaspoon dried parsley
  • teaspoon ground black pepper
  • teaspoon ground cayenne pepper
  • pound shrimp
  • pound bay scallops
  • pound crabmeat
  • pound calamari tubes
  • 1 (6.5 ounce) can chopped clams

Directions

  1. Gather all the ingredients for the recipe to ensure everything is ready to go.
  2. In a large pot, combine the fat-free cream cheese, cup of milk, and minced garlic over low heat. Cook, stirring occasionally, until the mixture is smooth and blended, about 3 minutes.
  3. Next, add the condensed cream of mushroom soup, undrained corn, the remaining 1 cup of milk, diced potatoes, chopped green onions, carrots, dried parsley, black pepper, and cayenne pepper. Stir everything together until well combined.
  4. Let the chowder simmer for about 25 minutes, stirring occasionally. Be sure to keep the heat low enough to prevent the chowder from boiling.
  5. Add the seafood: shrimp, scallops, crabmeat, calamari, and chopped clams. Stir gently, then cook for an additional 10 minutes, or until the seafood turns opaque.
  6. Once the seafood is cooked through, taste the chowder and adjust seasoning as needed. Serve hot, garnished with additional green onions or parsley if desired.
