Best Baked French Fries Recipe

Cook Time: 40 minutes

Ingredients

  • Cooking spray
  • 6 Yukon Gold potatoes, cut into thick fries
  • 1 tablespoon white sugar
  • cup extra-virgin olive oil
  • 1 teaspoon garlic powder, or more to taste
  • 1 teaspoon salt, or more to taste
  • 1 teaspoon ground black pepper, or more to taste

Directions

Step 1: Preheat the oven to 425F (220C). Line a baking sheet with aluminum foil and lightly spray it with cooking spray.

Step 2: Place the sliced potatoes in a colander. Sprinkle the potatoes with sugar and let them sit for 20 to 30 minutes to release excess liquid.

Step 3: After the potatoes have released their liquid, drain them and pat them dry with a paper towel.

Step 4: In a resealable plastic bag, combine the potato slices, olive oil, garlic powder, salt, and black pepper. Shake the bag until the potatoes are evenly coated.

Step 5: Spread the coated potato slices in a single layer on the prepared baking sheet, ensuring there's space between each slice.

Step 6: Bake the fries in the preheated oven for 20 minutes. Flip the fries and continue baking for an additional 20 minutes, or until they are crisp and golden brown.

Cooks Notes

When cutting the potatoes, I make 3 cuts lengthwise, which results in 4 ovals. I then slice each oval into 3 strips for even fries.

Don't skip the sugar! It helps release juices from the potatoes, which contributes to a crispier texture.

These are great! They're really easy, quick to make and are delicious. Mine didn't take the full 20 minutes on the second side. Be sure not to forget the non-stick spray - I used foil on my pan for easy cleanup and they stuck a bit because I didn't spray it. They were done in about 30 minutes of baking for me. I only had russets so I used them and they turned out great. Looking forward to making them with "teeny tiny potatoes" cut in half. And also looking forward to tinkering with seasonings - I can see these tasting really good with some parmesan thrown in, or a cheese garlic dry salad dressing seasoning packet. Definitely a keeper I'll make again and again.

Great flavor and so easy to make. For us, I omitted the garlic powder and substituted a bit of onion powder. I also combined the oil and dry ingredients together before pouring over the potatoes in the zip lock bag to avoid clumping and uneven distribution. Otherwise followed exactly. Added to the rotation! Thanks to the poster.

I am on a sodium restricted diet so I left out the salt. I had no cooking spray, so I just brushed the tin foil ever-so-lightly with olive oil. I took them out of the oven about 5 minutes earlier than the recipe called for. They were so amazing they are as good as if not better than the best restaurant fries I have tasted. Going to be making them at least once a week!

Fantastic!!! Almost skipped the sugar, but saw the caution. Secret process even better than a secret ingredient. Best fries from the oven. We swap in Garlic flavor Stonemill Salt Free Seasoning for salt. Just delicious. This will be in regular rotation for a long time.

I was skeptical to try this because I was concerned the potatoes would turn out sweet-tasting from the sugar sprinkles. But a good rub down of the potatoes to remove it and to dry the wedges proved to be successful. No sweet aftertaste! The texture of the potatoes were great. A perfect combo of a bit crispy on the outside and soft and cooked-through on the inside. The seasoning was also great. Next time, I will use a little ground rosemary, I think. This one's a keeper!

They were amazing though I think you can take a little bit of oil out. If you like your fries soft either cut the potato thinner or don't use the sugar to get all of the water out and cook for a lesser amount of time.

Great recipe, I didn't use the sugar, I just cut and soaked mine in water for 45 minutes, stained them and patted dry, and they were nice and crispy. So it's okay to skip the sugar.

Make sure to dry the fries off after the moisture collects on the surface. this will also wipe away any excess sugar left on the surface of them. I used paper towels. The sugar wicks away the moisture out of the top millimeter or so of the surface of the potatoes. This allows them to have a beautiful crispy/chewy texture and yet still be creamy inside! I will try this technique the next time I make fried potatoes for breakfast!

These came out great. I had my 3 and a half year old granddaughter help me with this. She sprinkled liberal amounts of sugar on the sliced potatoes. The potatoes released water and after the seasoning was added, I baked these for 45 minutes at 450F. Midway through I flipped the potatoes over. They came out very crispy. There were no left overs. I will definitely make these again.

I added some cayenne and paprika to the spice shake becaujse I like that little bit of bite. Definitely among the crispiest baked fries I've ever made. Not as good as an air fryer or oil fried, but that would be an unrealistic expectation. I pulled them a little early to keep them from burning but a solid first try, will try again

Great easy to follow instructions. Sprayed olive oil just enough to cover most of the fries because using 1/4 of a cup was waaay too much in my opinion. This is the perfect recipe for crispy fries.

Excellent recipe! If you want to skip the sugar, you can parboil the potatoes for 5 minutes after you cut them. Don’t boil them for too long, as they’ll get too soft and won’t crisp up the same in the oven, but 5 minutes in salted water and thoroughly dried after seems to work!
