Grilled Stuffed Zucchini Boats

Ingredients
- 2 medium zucchinis
- 1 slice white bread, torn into small pieces
- 1 jalapeno pepper, minced
- 6 tablespoons shredded sharp Cheddar cheese
- cup bacon bits
- cup minced onion
- cup chopped tomato
- 3 tablespoons diced green chile peppers
- 1 tablespoon minced black olives
- 1 pinch dried basil
- Seasoned salt to taste
- Ground black pepper to taste
Directions
- Prepare the grill for indirect medium heat.
- Place the zucchinis in a large pot with enough water to cover them. Bring to a boil and cook for 5 minutes. Drain the zucchinis, cool them down, and cut them in half lengthwise.
- Scoop out the pulp, leaving about 1/4 inch from the skin. Chop the pulp into small pieces.
- In a large bowl, mix together the zucchini pulp, torn bread, minced jalapeno, Cheddar cheese, bacon bits, onion, tomato, diced green chile peppers, and black olives.
- Season the mixture with dried basil, seasoned salt, and ground black pepper. Mix everything well to combine.
- Stuff the zucchini halves with the prepared mixture.
- Wrap each zucchini boat tightly with aluminum foil.
- Place the wrapped zucchini boats on the prepared grill over indirect heat. Cook for 15 to 20 minutes, or until the zucchini is tender.
