  • 2 tablespoons grapeseed oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, chopped
  • 2 teaspoons Cajun seasoning, or to taste, divided
  • red bell pepper, sliced
  • medium green bell pepper, sliced
  • 1 medium head cabbage, thinly sliced
  • 1 tablespoon butter, or more to taste (Optional)
  • Salt and ground black pepper to taste

Directions

Follow these steps to prepare this flavorful dish:

  1. Heat the grapeseed oil in a large cast iron skillet over medium heat.
  2. Add the chopped onions and cook until softened, about 3 minutes.
  3. Stir in the chopped garlic and cook until fragrant, 1 to 2 minutes.
  4. Season with 1 teaspoon of Cajun seasoning and stir to combine.
  5. Add the red and green bell peppers, cooking for an additional 1 to 2 minutes.
  6. Introduce the sliced cabbage, followed by the remaining 1 teaspoon of Cajun seasoning, and stir to mix everything together.
  7. Add the butter (if using) and stir until it melts into the mixture.
  8. Let the cabbage simmer for about 15 minutes, or until it reaches your desired softness.
  9. Season with salt and pepper to taste.

This was soooo good! I'm avoiding fat, so I used maybe a half teaspoon of olive oil and a splash of dry white wine. Didn't have any Cajun seasoning, so I used a sprinkle of red pepper flakes. I poured boiling water over the onion before I added it to the pan with the garlic. I have high blood pressure, so no salt, but I used some freshly ground pepper. I couldn't get over how flavorful and delicious this turned out - and I will definitely be making it again!
