Fruit Salad with Honey Lime Dressing

Ingredients

  • 2 large bananas, sliced
  • 1 (16 ounce) package fresh strawberries, hulled and sliced
  • pound fresh blueberries
  • 2 tablespoons honey
  • 1 lime, juiced
  • cup pine nuts

Directions

  1. In a large bowl, combine the sliced bananas, strawberries, and blueberries.

Yummy! I whipped up this dish for a big family event, and I ended up tripling the recipe--except for the blueberries. I opted for 2 dry pints of blueberries, and that turned out to be just the right amount. I didn't have any pine nuts on hand, so I swapped in unsalted, shelled sunflower seeds instead. The only issue I faced was that the seeds didn't stay crunchy as leftovers, so next time I'll serve them separately for people to sprinkle on top as they please.

I made this fruit salad using whatever fruits I had on hand at home. I made sure to generously coat the banana slices with lemon juice to prevent them from browning before adding them to the mix. I enhanced the salad by incorporating Chia seeds, Hemp Hearts, and walnuts, and also included kiwi and cantaloupe. Thank you for the inspiration. I've heard that cantaloupe should only be heated on its own - is that true? Nevertheless, I thoroughly enjoyed this salad and will definitely prepare it again. This dish was absolutely delightful! The only ingredient I omitted was pine nuts due to their absence in my pantry.
