Mom's Best Spaghetti Sauce Recipe

Original recipe (1X) yields 8 servings:

  • 4 (14.5 ounce) cans whole peeled tomatoes
  • 4 cups fresh sliced mushrooms
  • 2 (15 ounce) cans tomato sauce
  • 4 (6 ounce) cans tomato paste
  • 3 cups water
  • 2 onions, chopped
  • cup chopped fresh basil
  • 4 cloves garlic, minced
  • 4 teaspoons white sugar
  • 2 pinches baking soda, divided
  • Salt and ground black pepper to taste
  • cup grated Parmesan cheese

Directions

  1. Gather all ingredients.
  2. In a large saucepan, combine the whole tomatoes, sliced mushrooms, tomato sauce, tomato paste, water, chopped onions, basil, minced garlic, sugar, 1 pinch of baking soda, salt, and pepper.
  3. Bring the mixture to a boil over high heat while stirring continuously.
  4. Once boiling, reduce the heat to a simmer and let it cook for at least 4 hours. Stir occasionally to prevent sticking.
  5. After 4 hours, add the remaining pinch of baking soda. The sauce will foam up. Stir gently until the foam subsides.
  6. Continue simmering the sauce, stirring occasionally, until it becomes thick and nearly brown in color. Be sure to scrape the sides of the pan into the sauce to incorporate all the flavors.
  7. Stir in the grated Parmesan cheese. Taste the sauce and, if its too tangy or acidic, add another pinch of baking soda and simmer for an additional 30 minutes.
  8. Once the sauce reaches the desired thickness and flavor, remove from heat and allow it to cool to room temperature.
  9. Cover the cooled sauce and refrigerate for 8 hours or overnight to enhance the flavors.
  10. Reheat the sauce the next day and serve over your favorite dish.
