  • 2 (14.5 ounce) cans stewed tomatoes
  • 1 (6 ounce) can tomato paste
  • 4 tablespoons chopped fresh parsley
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt or to taste
  • teaspoon ground black pepper
  • 6 tablespoons olive oil
  • cup finely diced onion
  • cup white wine

Directions

  1. Place the stewed tomatoes, tomato paste, parsley, garlic, oregano, salt, and pepper into a food processor. Blend until the mixture is smooth.
  2. Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for about 2 minutes, or until it begins to soften.
  3. Stir in the blended tomato sauce and white wine. Mix well to combine.
  4. Allow the sauce to simmer, stirring occasionally, for about 30 minutes, or until it has thickened to your desired consistency.

Rewritten review: Since I don't own a food processor, I improvised by mashing diced tomatoes thoroughly and incorporating some tomato puree. I sautéed the onions and utilized all the ingredients as directed. I will definitely be making this dish again! It turned out absolutely delicious.

Oh wow, this dish is delicious! I recommend reducing the amount of oil slightly and including a generous pinch of basil, a small pinch of red pepper flakes, and a bit more garlic for added flavor. I've made this recipe twice now. The first time, I followed the original recipe but omitted the wine. It was delicious, but I thought it had a bit too much oil for me. The second time, I stuck to the original recipe but without the wine, and added 1 tsp of basil while reducing the oil from 6 tbsp to 3 tbsp. This version suited my taste better, but I'm considering adding a bit more basil and oregano next time to enhance the flavors even further.
