Venison Stew Recipe

Cook Time: 120 minutes

Venison Stew

Ingredients

  • 2 tablespoons vegetable oil
  • 2 pounds venison stew meat
  • 3 medium onions, chopped
  • 2 cloves garlic, minced
  • 3 cups water
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon salt
  • teaspoon dried oregano
  • 1 large bay leaf
  • 7 small potatoes, peeled and quartered
  • 1 pound carrots, cut into 1-inch pieces
  • cup all-purpose flour
  • cup water

Directions

  1. Heat oil in a large, heavy pot over medium heat. Add venison and cook, stirring occasionally, until the meat is browned, about 5 to 7 minutes.
  2. Add chopped onions and minced garlic. Cook, stirring, until the onions are translucent, about 5 minutes.
  3. Stir in water, Worcestershire sauce, salt, dried oregano, and bay leaf. Cover the pot and let the stew simmer for 1 to 2 hours, or until the venison becomes tender.
  4. Add the quartered potatoes and cut carrots to the pot. Continue to cook until the vegetables are tender, about 15 to 20 minutes.
  5. In a small bowl, mix the flour with cup of water. Pour this mixture into the stew and stir well. Allow the stew to cook for an additional 5 to 10 minutes, or until the broth thickens to your liking.
  6. Before serving, remove the bay leaf and discard it. Serve hot and enjoy!

Oh my goodness. I frequent this site a lot. I use the recipes a lot. But I have never left a review. This recipe was so delicious it prompted me to make a profile so I could review it! First off, venison is so tough and mildly gamey tasting. So, I have never been thrilled when my husband cooks it. It was always so tough and gummy. I felt like I would never chew it enough to swallow it. I thought it would be great to slow cook this type of meat to help tenderize it. I ran across this recipe and boy were we surprisingly impressed. I didn't change a thing in the recipe. I cooked it for 2 hours, added the carrots and tatoes and cooked it until they were tender. Then I served it over mashed potatoes. This was so good I wish my mouth was bigger. Try this, you will not be disappointed.

I’ve cooked this a few times now and tried different things with it. I like it with more carrots, usually just do 2 onions, and it needs more time cooking than what this recipe shows. In the 2 hours the meat was not as tender and carrots and potatoes needed more time. It’s easy to do this recipe in a crock pot over 6-8 hrs. The venison falls apart. One of my favorite recipes for venison. With steaks I’ve found the flavor always varies and it’s hard to get them consistent. With this, you wouldn’t know it isn’t beef unless someone told you.

I use this base as a venison pie and it’s the best! I add a bit more seasonings (garlic powder, cayenne, parsley, about 1/2tsp of each) and either cut the water back to 2 cups or give it time to reduce. I also add about 2-3 cup of red wine while reducing. Then put it in a pie crust and bake!

This is a good base to start from. I floured the meat and browned it first, then deglazed the pan with a 1/2 cup white wine (its all I had) then added the onions to sauté. I used beef broth instead of water for a richer flavor but one could argue that it overpowers the venison. I also added celery, seems weird not to have celery in a stew. Next time I'll try soaking the meat a bit in either water or milk prior. Absolutely delicious!

It was easy and so delicious. I added lots of fresh ground pepper to the venison when I browned it. I also added about 3 stalks of celery with the onions. I used 2 bay leaves vs. 1 since I love the flavor of bay leaves. Lastly I used 2 cups of beef broth and 1 of water when I simmered it. When I added the flour I used 1/4 cup beef broth. My husband is Italian and is very critical of American food but he loved this stew. I will be making it again for sure and if I don't have venison, will use beef.

I had to add about 2 cups of additional liquid after boiling my meat for 2 hours; even with the cover on, it had cooked down enough that I wouldn't have had enough liquid to cook my carrots and potatoes. I opted to use beef broth instead of water, along with about 1/2 cup of red wine. Once the stew was done, it was really good, but I chose to add 6oz of tomato paste, a can of undrained corn, and 6oz of frozen peas to make it more to our taste. Overall, it was really good, I ate 2 bowls. I should also add that I am not a big fan of venison, but prepared this way it was good. I diced it very small so that I would not get a big wad of meat in my mouth.

Delicious! I made it twice and love this recipe. To tenderize and minimize the game taste then soak in milk for 24 hrs. I use buttermilk. Drain then continue on the recipe. Super tender and so very very yummy. I also use chicken broth that I make myself instead of water.

This is a keeper in our house!! Followed the previous suggestions and soaked the venison in milk for 20-30mins, replaced the water with beef stock and added a cup of red wine.

This stew was great! I did use beef broth instead of water and deglazed the pan I used the cook the meat with red wine and added everything, to the slow cooker. I added celery. I also used brown gravy mix the coat the meat with. I added a mixture of half water and half flour with a little bit of the broth from the slow cooker and cooked that in the bottom of a big pot on the stove until thickened, then added the stew from the slow cooler to that and boiled it at the end to thicken up the broth, and it made a tasty stew. My husband said it would probably taste even better the next day, but unfortunately there were no leftovers!

This was very good and very easy. I soaked the venison in milk for 24 hours (may help to reduce gaminess) and dredged the meat in flour before browning it. I made it in the slow cooker with extra veggies. Family asked me to make it again. Add Cabbage, tomatoes, parsnips, turnips, etc.

This is the BEST stew I have ever tasted and it was my first time ever cooking anything with venison. I must say...it was DELICIOUS!!! My 16 year old ate 3 bowls of it after claiming he would never eat venison...needless to say- he loved it! I altered two things with the original recipe.....I used beef stock instead of the water and I cooked it in the crock-pot on low for 5 hours after I browned the meat. I will definitely be making this again: )

Turned out great!! Used beef stock in place of water. For those that don’t eat a lot of venison, make sure you cut all the silver looking membrane off particularly if your using one of the quarters. Cut into stew meat size and soak in milk for a few hours. Very good served over egg noodles!

I made this recipe yesterday and it was delicious! I did substitute beef gelatin powder for the flour to make it gluten free. Great dish for a chilly winter day.

I used 1/4 tsp teaspoon dried oregano instead of 1/2 tsp. I make this recipe often my family and I love it with cornbread

I made this with some beef but mainly deer meat and used beef broth instead of water. It was absolutely amazing! My entire family I loved it, even my picky child who did not even want to try it initially.
