FOR THOSE WHO THINK THIS RECIPE TOO BLAND: Take one onion for every 3 potatoes. Cut it in half lengthwise and cut it into slivers. Take all ingredients, including the onions, and put them in a zipper bag. Knead and shake until ingredients are thoroughly mixed. Proceed with recipe directions. The onions add quite a bit of zing as well as nutrition!

These were phenomenally good! Quick and easy - and much tastier than the frozen variety. Cooking time and temperature will vary greatly on how thick you cut the wedges. I followed the recommendations of others and reduced the cooking time and temp to 425°F. However, after 30 min it was not ready. I had to increase the temperature to 475°F in order to ensure they would be ready in time for dinner. So, if you cut your wedges small and thin - you will need to cut the temp and cooking time. But if you cut true (thick) wedges - follow the recipes directions (although I strongly encourage flipping the potatoes halfway through the process). For a super easy cleanup - I poured the oil and spices into a gallon size Ziploc bag and mixed it all together until well blended - then I added the cut potatoes and kneaded and shook the bag until all the potatoes were well and evenly coated. Then poured it into a 9x13 glass baking dish lined with foil. Minor adjustments: I used paprika, garlic powder, salt, freshly ground black pepper, a pinch of chili powder - mine is exceptionally potent, and cumin)... The second time making this recipe I added fresh minced onion - and that was a very tasty addition too!

Incredible fries! Important -- bake at 400 degrees, for 40-45 minutes, and turn at least once during the baking. If you use the 450 degrees in the recipe, the fries will burn. I mixed everything in a gallon size ziploc bag. For the spices, I used freshly minced garlic (no onion powder), paprika, cumin, cayenne pepper, and chili powder. I used 6 potatoes (4 russet, 2 sweet) and 1/3 cup oil. Delicious!!

This is a great recipe! The only reason I can't give it 5 stars is because it needs the tweaking that other posters mentioned: a little salt, lower temperature (400degrees), less cook time (30min), and they need to be turned 1/2way through. Thanks for posting this!

This was great, pretty easy, and I had everything on hand. I made a few tweaks based on other reviews... I used minced garlic, and added salt (could have added more). I made a ton... used 7 med russets, and so I used around 1/3 cup oil, and 1 2/3 tsp of each ingredient (other reviews mentioned upping the seasonings and I upped the portions anyhow)...and I mixed everything in a ziplock freezer bag. I followed other suggestions to bake at 400 for 15, turn, and another 15 minutes. I think my wedges were on the thicker side, I could have used a higher temp and longer time to get them crispier on the outside... but they’re great - great base recipe that could be tweaked with adding more garlic and Parmesan or cutting the potatoes thinner to fit whatever you making with it! Will definitely do this again!

I corrected the directions. I only cooked these for 20 min. and turned them after 10 minutes. Otherwise they burn. I love these. I just had to add salt. These are so delish and better for you then fried. I already made them twice in 2 days. I used red potatoes.

I went on line to find the temperature to bake my fries at and came across this recipe. I had already planned to spice it up with the suggested spices but added cayenne pepper...LOTS of cayenne pepper (I'm a "heat-aholic!). I used 6 small - medium Russet potatoes and cut them in a 1/4 inch french fry; skins on. I used a generous amount of Canola Oil and put all my spices, oil and potatoes right on the baking sheet and mixed there. I divided the potatoes in 2 batches so they would all lay in a single layer. the first batch came out perfect at 450 degrees and 45 minutes cooking time (large batch approximately 3 small to medium potatoes). Second batch, a smaller batch, I did not add extra oil but added extra spices; cooked them for 40 minutes and they nearly burned. Keep in mind I like my fries on the well-done side and the first batch had many small edges of potato/skin pieces that were crunchy little morsels of goodness. Lessons learned: Temperature is fine. Less potatoes, less baking time and I think more oil is better. I hope this helps people who felt the times and temps were wrong. You have to experiment.

I made these tonight and they were AMAZING! I too lowered the temperature to 400 and baked them for 35-40 minutes , turning them at the 20 minute mark. I did not have chili powder, but I had the next best thing .......SIRACHA !!!!!! I drizzled a lot on top and mixed them up before baking , for some reason it made them even taste cheesy but I wasn’t complaining , everyone loved them even my dad who is super picky about spicy things !!

Not a huge french fries lover but these were awesome! And the Hubby loved them. After reading the revues, I baked at 400 for 10 minutes and turned potatoes, then baked another 15 minutes. They were perfect. But I must admit I didn't do 'wedges' so they weren't maybe as thick as the recipe called for. YUM!

I think the heat is too high. I should have used about 350. I had to only keep it in for about 30 minutes because I noticed them really burning. I used way more than a spoon of oil. I covered them completely with oil and half way through, I flipped them and covered them again. They were good, but definitely burned.

My family liked these potatoe wedges. They were crispy outside and tender inside. I followed the ingredient list as written, but I baked them at 400 degrees for about 45 minutes. I turned them 3 times and then put them under the broiler for 2 minutes per side to crisp them up. They were a bit greasy so I drained them on paper towels before serving them. We'll definitely make them again.

I followed the recipe as written and planned my meal around the 45 minutes cooking time. Darn! They were burned and dried out before the rest of the meal was ready! I agree with the person that said the recipe needs edited so that you don't HAVE to read the reviews!

I used Yukon Gold potatoes as that's what I had on hand. I used 4 medium sizes and cut them fairly thin. Made the seasoning with exception chili powder These turned out great! Reminded me of Wing Stop fries. Will defintely be making these again. I did follow other and baked at 400.
