  • 1 tablespoon olive oil
  • pound lean ground beef
  • pound Mexican chorizo, casing removed and meat crumbled
  • cup chopped onion
  • 1 tablespoon chili powder
  • 1 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • teaspoon ground coriander
  • teaspoon ground black pepper
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes
  • 1 cup frozen corn
  • (8 ounce) package cream cheese
  • 1 tablespoon butter
  • 1 (2 pound) package hash brown potatoes
  • 1 cup shredded Cheddar cheese
  • Shredded lettuce
  • 1 cup guacamole

Directions

Step 1: Preheat the oven to 350F (175C).

Step 2: Heat olive oil in a large skillet over medium-high heat. Add ground beef, chorizo, and chopped onion. Cook and stir until the meat is browned and crumbly, about 5 to 7 minutes.

Step 3: Season the meat mixture with chili powder, cumin, paprika, salt, coriander, and black pepper. Stir well.

Step 4: Add black beans, diced tomatoes, and corn to the skillet. Stir and cook until the mixture is heated through, about 5 minutes.

Step 5: Transfer the cooked mixture into a 2-quart baking dish.

Step 6: In a microwave-safe bowl, combine cream cheese and butter. Heat in the microwave on high until melted, about 1 minute. Stir until smooth.

Step 7: Spread the cream cheese mixture evenly over the meat mixture in the baking dish.

Step 8: Layer the hash browns over the cream cheese mixture and top with shredded Cheddar cheese.

Step 9: Bake in the preheated oven for 30 to 40 minutes, or until the cheese is melted and the potatoes are lightly brown.

Step 10: Serve hot, garnished with shredded lettuce and a side of guacamole.

Recipe Tip

For a more authentic Mexican dish, substitute queso panela for the cream cheese and queso blanco for Cheddar.
