Barbecue Chicken Grilled Pizza Recipe

Grilled Chicken BBQ Pizza
Original Recipe Yield: 6 servings
Ingredients:
- 1 cup chopped cooked chicken
- cup barbecue sauce, divided
- 1 (13.8 ounce) package refrigerated pizza dough
- 2 tablespoons olive oil, or as needed
- 1 cup shredded Colby-Monterey Jack cheese
- 1 cup diced tomatoes, or to taste
Directions:
- Preheat an outdoor grill to medium heat and lightly oil the grill grate.
- In a medium bowl, combine the chopped chicken with 2 tablespoons of barbecue sauce until evenly coated.
- Roll out the pizza dough on a flat surface and cut it in half to create 2 rectangles.
- Brush the tops of the dough rectangles with olive oil.
- Place the dough, oil-side down, on the preheated grill and cook until the bottom is browned and the top starts to bubble, about 5 minutes.
- Brush the top of the dough with more olive oil, then flip it over.
- Spread the remaining barbecue sauce over the grilled crusts. Top with the coated chicken, shredded cheese, and diced tomatoes.
- Cover the grill and cook for another 2 to 3 minutes until the cheese is melted and bubbly.
- Remove from the grill and let cool for 2 to 3 minutes before slicing and serving.
