Crusty Herb Potato Wedges

Ingredients
- 2 Russet potatoes, each cut into 6 equal wedges
- Olive oil
- 1 tablespoon herbes de Provence
- 1 pinch paprika, or to taste
- Salt and ground black pepper, to taste
Directions
- Preheat your oven to 425F (220C). Line a baking sheet with a silicone baking mat for easy cleanup.
- In a large bowl, toss the potato wedges with olive oil, herbes de Provence, paprika, salt, and black pepper. Make sure the potatoes are evenly coated with the seasoning mixture.
- Place the seasoned potato wedges on their sides onto the prepared baking sheet, making sure they are arranged in a single layer.
- Bake the potatoes in the preheated oven for 15 minutes, allowing them to soften and start to brown.
- After 15 minutes, flip the wedges onto their other sides and return them to the oven. Continue baking for another 20 minutes or until the potatoes are golden brown and crispy on the outside.
