Spanish Cauliflower Rice Recipe
Ingredients
This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly.
- 2 tablespoons olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 small red bell pepper, diced
- 1 small tomato, diced
- 3 cups riced cauliflower
- cup vegetable broth
- 1 tablespoon tomato paste
- 1 teaspoon cumin
- 1 teaspoon paprika
- teaspoon dried oregano
- teaspoon ancho chile powder
- Salt and pepper to taste
Directions
Step 1: Heat the olive oil in a skillet over medium heat. Add the diced onion and cook until translucent, about 3 minutes.
Step 2: Add the minced garlic to the skillet and cook for an additional 2 minutes, until fragrant.
Step 3: Add the diced red bell pepper and tomato to the skillet. Cook for another 3 minutes, allowing the vegetables to soften.
Step 4: Stir in the riced cauliflower, vegetable broth, tomato paste, cumin, paprika, oregano, and ancho chile powder. Mix everything together well.
Step 5: Let the mixture cook for about 5 minutes, stirring occasionally. Taste and adjust the seasoning if needed, adding salt and pepper as desired.
Step 6: Continue cooking until the cauliflower rice is tender but still has a slight bite. This should take about 3 to 5 more minutes.
Step 7: Season with additional salt and pepper before serving. Enjoy!
Cook's Notes
- To make cauliflower rice at home, break a head of cauliflower into florets and pulse them in a food processor until they resemble grains of rice. Be sure not to over-process, as the size of the grains will vary slightly.
- If you prefer, you can use chicken stock in place of vegetable broth, or swap ancho chile powder with chipotle powder for a smokier flavor.
- A half-can of diced tomatoes can be used instead of fresh tomatoes if needed.
