Spanish Cauliflower Rice Recipe

Cook Time: 15 minutes

Ingredients

This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly.

  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 small red bell pepper, diced
  • 1 small tomato, diced
  • 3 cups riced cauliflower
  • cup vegetable broth
  • 1 tablespoon tomato paste
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • teaspoon dried oregano
  • teaspoon ancho chile powder
  • Salt and pepper to taste

Directions

Step 1: Heat the olive oil in a skillet over medium heat. Add the diced onion and cook until translucent, about 3 minutes.

Step 2: Add the minced garlic to the skillet and cook for an additional 2 minutes, until fragrant.

Step 3: Add the diced red bell pepper and tomato to the skillet. Cook for another 3 minutes, allowing the vegetables to soften.

Step 4: Stir in the riced cauliflower, vegetable broth, tomato paste, cumin, paprika, oregano, and ancho chile powder. Mix everything together well.

Step 5: Let the mixture cook for about 5 minutes, stirring occasionally. Taste and adjust the seasoning if needed, adding salt and pepper as desired.

Step 6: Continue cooking until the cauliflower rice is tender but still has a slight bite. This should take about 3 to 5 more minutes.

Step 7: Season with additional salt and pepper before serving. Enjoy!

Cook's Notes

  • To make cauliflower rice at home, break a head of cauliflower into florets and pulse them in a food processor until they resemble grains of rice. Be sure not to over-process, as the size of the grains will vary slightly.
  • If you prefer, you can use chicken stock in place of vegetable broth, or swap ancho chile powder with chipotle powder for a smokier flavor.
  • A half-can of diced tomatoes can be used instead of fresh tomatoes if needed.
