Cook Time: 300 minutes

Ingredients

  • 1 acorn squash, halved and seeded
  • 1 cup water
  • 1 maple tea bag
  • 4 ounces kosher turkey sausage, cut into bite-size pieces
  • 1 tablespoon peanuts
  • teaspoon vanilla extract
  • 1 tablespoon dried cranberries
  • 1 teaspoons golden raisins
  • 1 teaspoon light brown sugar

Directions

Step 1: Place the acorn squash, water, and maple tea bag into the slow cooker.

Step 2: Set the slow cooker to High and cook for approximately 1 hour, or until the squash is tender.

Step 3: Once tender, remove the squash flesh from the skin and return it to the slow cooker. Discard the skin and tea bag.

Step 4: Stir in the sausage, peanuts, and vanilla extract into the squash mixture.

Step 5: Continue cooking on High for an additional 4 hours, allowing the flavors to meld together.

Step 6: After the cooking time, add the cranberries, golden raisins, and brown sugar. Stir everything together until well combined.

Serve warm and enjoy this hearty, maple-infused dish that combines the sweetness of squash and dried fruits with the savory turkey sausage.

This dish was mediocre in my opinion. It felt like it lacked a certain element, and I believe it had to do with the texture. It reminded me of mashed potatoes with some extra ingredients. It was flavorful, but not something I would intentionally cook again. I made a slight alteration by browning the sausage for added texture and used apple cinnamon tea with a dash of maple syrup since I couldn't find maple-flavored tea.
