Chicken Sweet Potato Skillet Recipe

Ingredients

  • 1 tablespoon olive oil, or as needed
  • 1 skinless, boneless chicken breast half, cut into cubes
  • 1 large sweet potato, peeled and cut into 1/2-inch pieces
  • 1 tablespoon Irish whiskey
  • 1 tablespoon minced fresh sage
  • 1 pear - peeled, cored, and cut into 1/2-inch pieces
  • cup water
  • 2 cups baby spinach
  • cup chopped toasted hazelnuts
  • Salt and ground black pepper to taste

Directions

Step 1: Heat the olive oil in a skillet over medium heat. Add the chicken cubes and cook, stirring occasionally, until the chicken is browned, about 3 to 5 minutes. Remove the chicken from the skillet using a slotted spoon and set it aside on a plate.

Step 2: In the same skillet, add the sweet potato pieces and cook, stirring occasionally, until they start to brown slightly, about 5 to 10 minutes. Return the chicken to the skillet.

Step 3: Pour the Irish whiskey into the skillet, then add the minced sage, pear pieces, and water. Stir everything well to combine.

Step 4: Partially cover the skillet and lower the heat to medium-low. Let the mixture cook for about 10 minutes, or until the chicken is cooked through and the sweet potatoes are tender. Stir occasionally.

Step 5: Remove the lid and sprinkle the spinach over the chicken and sweet potato mixture. Stir occasionally as the spinach wilts, which should take about 5 minutes.

Step 6: Stir in the chopped toasted hazelnuts. Season with salt and black pepper to taste. Serve and enjoy!

This hash style recipe is truly delightful. The only adjustment I made was adding some spicy seasoning towards the end. I highly recommend toasting the hazelnuts - it makes a significant difference in their flavor. Try tasting some untoasted and then try some toasted... the toasted ones are so much better.

My husband and I are getting ready to start a 30-day cut diet, and we plan to incorporate this recipe with a few adjustments. I toasted slivered almonds and added about 1 tablespoon of ground sage to enhance the flavor. Instead of the full amount of chicken breasts, I used three thinned ones and swapped one apple (which might not be allowed once we begin the diet, but shouldn't affect the taste significantly). It's important to add some olive oil while browning the sweet potatoes to prevent them from getting overcooked.

Cozy and comforting brunch option. The combination of sage, hazelnuts, and pear gave it a strong aroma that was a bit too sweet for a breakfast dish. I might replace some or all of the hazelnuts with pecans and consider adding onion for more balance. Planning to revisit this recipe in the autumn, experimenting with squash instead of sweet potato. Overall, despite some adjustments needed, I liked this dish as it was presented and will definitely prepare it again with modifications.

We enjoyed this dish but thought it was a bit dry. I suspect the sage I included had lost its flavor, as it was undetectable in the final taste. Nevertheless, it was tasty enough that I plan to prepare it again, this time with fresh sage and a touch more liquid, most likely chicken stock.

We usually love the apple & sweet potato dish with garlic sausage, but unfortunately, this one didn't quite hit the mark for us. There were plenty of leftovers, so I decided to get creative and turned them into a delicious apple sweet potato curry soup. I also used the chicken in a different meal.

Substituted apples and chicken broth instead of pears and water, used walnuts as topping, and added plenty of mixed baby greens. A delicious and effortless dish!
