Chef John's Miso-Glazed Barramundi Recipe
Ingredients
- 2 tablespoons yellow miso paste
- 2 tablespoons seasoned rice wine vinegar
- 1 tablespoon brown sugar
- 1 tablespoon soy sauce
- 2 (5 ounce) barramundi fillets
- 1 teaspoon vegetable oil
Directions
- In a small bowl, whisk together miso paste, rice wine vinegar, brown sugar, and soy sauce until the mixture is smooth and well combined.
- Place the barramundi fillets on a plate with the rounded sides facing up. Spread half of the miso glaze evenly over the rounded sides of the fillets.
- Heat the vegetable oil over high heat in a nonstick skillet. Once the oil is hot, add the fillets, glaze side down, and spread the remaining glaze evenly over the flat sides of the fish.
- Cook the fillets for about 1 to 2 minutes, or until the edges start to turn slightly white.
- Flip the fillets carefully and continue cooking for another 1 to 2 minutes, or until the fish is flaky and opaque throughout.

Quick, simple, and full of flavor. I cooked a sea bass and found that it required 2.5 minutes on each side - two minutes just wasn't sufficient.
