Chef John's Miso-Glazed Barramundi Recipe

Ingredients

  • 2 tablespoons yellow miso paste
  • 2 tablespoons seasoned rice wine vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • 2 (5 ounce) barramundi fillets
  • 1 teaspoon vegetable oil

Directions

  1. In a small bowl, whisk together miso paste, rice wine vinegar, brown sugar, and soy sauce until the mixture is smooth and well combined.
  2. Place the barramundi fillets on a plate with the rounded sides facing up. Spread half of the miso glaze evenly over the rounded sides of the fillets.
  3. Heat the vegetable oil over high heat in a nonstick skillet. Once the oil is hot, add the fillets, glaze side down, and spread the remaining glaze evenly over the flat sides of the fish.
  4. Cook the fillets for about 1 to 2 minutes, or until the edges start to turn slightly white.
  5. Flip the fillets carefully and continue cooking for another 1 to 2 minutes, or until the fish is flaky and opaque throughout.
