Chickpea Tacos Recipe
Original Recipe Yield: 4 servings
Ingredients
- 2 (15 ounce) cans chickpeas, drained and rinsed
- cup water
- 1 (1 ounce) package taco seasoning mix (such as Taco Bell)
- 8 taco shells
Directions
Step 1: Place chickpeas in a saucepan over medium heat. Add the water and taco seasoning mix. Stir the mixture regularly to ensure it heats evenly.
Step 2: Cook for 5 to 7 minutes, or until the chickpeas are thoroughly heated. Remove the pan from the heat once done.
Step 3: Mash the chickpea mixture using a spoon or potato masher until the chickpeas are partially crushed. The consistency should be a bit chunky.
Step 4: Divide the mashed chickpea filling evenly among the taco shells.

I believe that using one packet of taco seasoning for each can of chickpeas (or perhaps one and a half packets for two cans) would be ideal. When mashed up, the flavors really come through. I also sautéed a chopped onion in the pan before adding the chickpeas. Overall, it's a good and easy recipe with some minor adjustments.

These were delicious and satisfying! I only had one can of chickpeas, so I added a can of cannellini beans too. They turned out wonderfully. We enjoyed them on gluten-free tortillas.

This recipe is very straightforward and quick to prepare. However, I found that the taco seasoning didn't have a strong enough flavor, so I'm not sure if the chickpeas absorbed it properly or not.
