One-Skillet Italian Chicken, Spinach, and Farro Recipe

Ingredients

  • Cooking spray
  • 12 ounces skinless, boneless chicken breast, cubed
  • cup onion, diced
  • 1 (14.5 ounce) can chicken broth
  • 1 cup farro
  • 1 (14.5 ounce) can Italian-style diced tomatoes
  • 6 ounces baby spinach
  • teaspoon basil
  • teaspoon dried parsley
  • Salt and pepper to taste
  • 2 tablespoons freshly grated Parmesan cheese, or to taste (Optional)

Directions

Step 1: Heat a skillet over medium heat and spray with cooking spray.

Step 2: Add the cubed chicken and diced onion to the skillet. Cook for 5 to 10 minutes until the chicken is fully cooked and no longer pink in the center. Remove the chicken from the skillet.

Step 3: Pour chicken broth into the skillet and bring to a boil.

Step 4: Stir in the farro, then cover the skillet and reduce the heat. Cook for 15 to 20 minutes, or until most of the liquid has been absorbed.

Step 5: Return the cooked chicken to the skillet. Stir in the diced tomatoes with their liquid, baby spinach, basil, and parsley. Season with salt and pepper to taste.

Step 6: Reduce the heat, cover the skillet, and simmer for 5 to 7 minutes until the spinach has wilted.

Step 7: Remove the skillet from heat and let it stand, covered, for 3 to 5 minutes.

Step 8: Serve the dish topped with freshly grated Parmesan cheese, if desired.

This dish was fantastic! It was my inaugural attempt at preparing farro, and it turned out to be a triumph! Cooking farro does require quite a bit of time, but the end result is definitely worth it. I adored the taste of this meal and appreciated its simplicity. I decided to double the recipe, and it fed 4 people with enough leftovers for lunch.
