Pressure Cooker Barbeque Chicken Recipe

Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 teaspoon ground paprika
  • Salt and ground black pepper to taste
  • 1 onion, minced
  • cup chili sauce
  • cup water
  • 2 tablespoons vinegar

Directions

  1. Heat the pressure cooker over medium heat. Add chicken thighs and cook until browned, approximately 2 to 3 minutes per side.
  2. Season the chicken with paprika, salt, and black pepper.
  3. In a separate bowl, combine minced onion, chili sauce, water, and vinegar. Pour the mixture over the chicken in the pressure cooker.
  4. Close the pressure cooker securely and place the pressure regulator over the vent according to the manufacturer's instructions.
  5. Heat the cooker until steam escapes in a steady flow, producing a whistling sound. Adjust the temperature so that the regulator is gently rocking.
  6. Cook for 15 minutes, ensuring the cooker stays at the appropriate pressure.
  7. Remove from heat and let the pressure release naturally for 5 to 10 minutes, as per the manufacturer's instructions.
  8. Unlock the lid and remove the chicken. Serve and enjoy!

Cook's Notes

  • You can substitute any cut of chicken for the thighs if preferred.
  • The recipe allows for up to 3 pounds of chicken if you wish to increase the amount.
  • Be sure to cook the chicken for the full time to prevent the sauce from being too watery.

I really enjoyed the straightforwardness of this recipe. I did take a shortcut and used my favorite bottled barbecue sauce, then added the onions, vinegar, and water to it. Since there were only two of us, I halved the recipe and cooked it for an additional 5 minutes, yet the sauce turned out too thin and struggled to cling to the chicken. I ended up putting the chicken under the broiler to achieve the desired crispiness. The dish had a delightful flavor and was tender, but next time I might consider reducing the amount of water or omitting it altogether. Update: I tried making it again without adding any extra water to the cooker, which worked better, although I still needed to broil it to get that perfect crisp and caramelized sauce.

The dish turned out incredibly delicious and tender! I used 6 hind quarters that weighed 2.8 pounds before deboning and removing the skin. Instead of chili sauce, I used Famous Dave's Hot and Sassy barbecue sauce which worked really well. There was plenty of sauce for the dish. I pressure cooked it for 12 minutes and then allowed it to naturally cool for 5 minutes before releasing the steam. I definitely plan on making this again, but I might experiment with a different sauce next time.

I followed the recipe precisely, except I adjusted the pressure cooking time since my pressure cooker operates at 15 lbs pressure. Instead of 15 minutes, I cooked the chicken for 8 minutes and allowed the pressure to naturally release. The chicken turned out a mustard yellow color and though it was good, it didn't have the expected BBQ flavor. Adding Fred's Hot Sauce not only gave it a vibrant red color but also added a nice kick of spice. Since I enjoy using my pressure cooker, I may give this recipe another try, but next time I'll use BBQ sauce instead to achieve that classic barbecue taste.

I absolutely loved it! I didn't have any chili sauce available, so I used a generic barbecue sauce as a substitute. Next time, I would double the amount of the delicious sauce since I served it over a bed of rice.

A bit bland and watery. We cooked it, ate it, then removed the meat and simmered the sauce to thicken before freezing the leftovers. The thicker sauce was an improvement, though still not amazing.
